🍽️ Millet Patties with Fried Egg

Ingredients
- 1 shallot
- 1 garlic clove
- 2 tbsp olive oil
- 600 ml vegetable broth
- 250 g millet
- 50 g sour cream
- 4 tbsp freshly grated parmesan
- salt
- pepper (from the mill)
- 12 quail eggs
- 2 tbsp vegetable oil
- chive rings (for garnish)
Instructions
- 1. Peel the shallot and the garlic.
- 2. Finely dice the shallot and the garlic.
- 3. Heat olive oil in a pot.
- 4. Sauté the shallots and garlic briefly in the hot oil.
- 5. Deglaze the mixture with about 500 milliliters of broth.
- 6. Rinse the millet under running water in a sieve.
- 7. Add the drained millet to the hot broth.
- 8. Cover the pot.
- 9. Simmer the millet on low heat for about 15 minutes.
- 10. Remove the pot from the heat.
- 11. Let the millet swell covered for another 15 to 20 minutes.
- 12. If necessary, add a little more broth.
- 13. Ensure that the millet has absorbed all the liquid.
- 14. Stir the sour cream into the millet.
- 15. Stir the Parmesan into the millet.
- 16. Season the mixture with salt and pepper.
- 17. Heat oil in a large frying pan.
- 18. Fry the eggs in the hot pan to make sunny-side-up eggs.
- 19. Salt the sunny-side-up eggs.
- 20. Pepper the sunny-side-up eggs.
- 21. Fill the millet into small tartlet molds.
- 22. Press the millet firmly in the molds.
- 23. Carefully turn out two or three millet patties onto a plate.
- 24. Place the sunny-side-up eggs on the millet patties.
- 25. Sprinkle the dish with chives.
- 26. Serve the dish.
