🍳 Fluffy Millet Omelette with Nectarines

Ingredients
- 40 g millet
- 2 eggs (M)
- 10 g raw cane sugar (2 tsp)
- 1 pinch salt
- 150 g vanilla yogurt (3.5% fat)
- 2 tbsp peach puree
- 250 g nectarine (2 nectarines)
- 2 tsp sunflower oil
Instructions
- 1. Bring 75 milliliters of water to a boil in a pot.
- 2. Add the millet to the boiling water and stir briefly.
- 3. Immediately reduce the heat to the lowest setting.
- 4. Cook the millet for 7 minutes with a lid on.
- 5. Stir vigorously several times during this period.
- 6. Remove the pot from the heat and let the millet swell for another 12 minutes with the lid on.
- 7. Let the cooked millet cool down completely.
- 8. Add the eggs, sugar, and a pinch of salt to a bowl.
- 9. Whisk the mixture well with a whisk.
- 10. Stir the cooled millet into the egg mixture.
- 11. Put the vanilla yogurt and peach puree into a separate small bowl.
- 12. Stir the yogurt mixture until smooth with no lumps remaining.
- 13. Wash the nectarines thoroughly.
- 14. Dry the fruits with a kitchen towel.
- 15. Halve the nectarines and remove the pits.
- 16. Cut the fruit flesh into thin wedges.
- 17. Heat some oil in a non-stick frying pan.
- 18. Pour the millet batter into the hot pan.
- 19. Fry the omelette for about 4 minutes over medium heat.
- 20. Carefully flip the omelette.
- 21. Fry the other side for 4 to 5 minutes until golden brown.
- 22. Place the finished omelette on a plate.
- 23. Garnish it with the peach yogurt mixture and the nectarine wedges.
- 24. Serve the dish immediately.
