  1. 1. Bring 75 milliliters of water to a boil in a pot.
  2. 2. Add the millet to the boiling water and stir briefly.
  3. 3. Immediately reduce the heat to the lowest setting.
  4. 4. Cook the millet for 7 minutes with a lid on.
  5. 5. Stir vigorously several times during this period.
  6. 6. Remove the pot from the heat and let the millet swell for another 12 minutes with the lid on.
  7. 7. Let the cooked millet cool down completely.
  8. 8. Add the eggs, sugar, and a pinch of salt to a bowl.
  9. 9. Whisk the mixture well with a whisk.
  10. 10. Stir the cooled millet into the egg mixture.
  11. 11. Put the vanilla yogurt and peach puree into a separate small bowl.
  12. 12. Stir the yogurt mixture until smooth with no lumps remaining.
  13. 13. Wash the nectarines thoroughly.
  14. 14. Dry the fruits with a kitchen towel.
  15. 15. Halve the nectarines and remove the pits.
  16. 16. Cut the fruit flesh into thin wedges.
  17. 17. Heat some oil in a non-stick frying pan.
  18. 18. Pour the millet batter into the hot pan.
  19. 19. Fry the omelette for about 4 minutes over medium heat.
  20. 20. Carefully flip the omelette.
  21. 21. Fry the other side for 4 to 5 minutes until golden brown.
  22. 22. Place the finished omelette on a plate.
  23. 23. Garnish it with the peach yogurt mixture and the nectarine wedges.
  24. 24. Serve the dish immediately.
