🍽️ Crispy Millet Patties with Spinach and Peas

Ingredients
- 150 g millet (golden millet)
- salt
- 200 g peas (frozen; thawed)
- 300 g baby spinach
- 4 garlic cloves
- 3 tbsp olive oil
- pepper
- 45 g potato starch (3 tbsp)
- 0.5 tsp cayenne pepper
- 0.5 tsp turmeric powder
- 0.5 tsp garam masala
- 40 g spelt whole wheat flour or whole wheat breadcrumbs (3 tbsp)
Instructions
- 1. Rinse the millet in a sieve under hot water.
- 2. Place the millet in a pot.
- 3. Pour double the amount of boiling salted water over it.
- 4. Cook the millet for 15 to 20 minutes over medium heat.
- 5. Let the cooked millet cool down for 10 minutes.
- 6. Cook the peas in boiling salted water for 3 to 4 minutes.
- 7. Drain the peas and let them drain well.
- 8. Roughly crush the peas with a hand blender.
- 9. Wash the spinach thoroughly.
- 10. Place the wet spinach in a large pot.
- 11. Cook the spinach over medium heat until it wilts.
- 12. Place the spinach in a sieve.
- 13. Squeeze out the remaining liquid from the spinach.
- 14. Roughly chop the spinach.
- 15. Peel the garlic.
- 16. Finely chop the garlic.
- 17. Heat one tablespoon of oil in a pan.
- 18. Sauté the garlic for 2 minutes.
- 19. Add the chopped spinach.
- 20. Sauté the spinach for another 2 minutes.
- 21. Season the mixture with salt and pepper.
- 22. Let the spinach-garlic mixture cool down.
- 23. Mix the potato starch with 4 to 5 tablespoons of water to form a smooth paste.
- 24. Mix the cooled millet with the peas.
- 25. Add the cooled spinach mixture.
- 26. Add pepper, cayenne pepper, turmeric powder, and garam masala.
- 27. Stir in the potato starch paste.
- 28. Add the flour.
- 29. Mix everything into a moldable dough.
- 30. Season the dough with salt.
- 31. Wet your hands with water.
- 32. Form 16 patties from the mixture.
- 33. Heat one teaspoon of oil in a pan.
- 34. Place 4 patties in the hot pan.
- 35. Fry the patties for 3 to 4 minutes per side until golden brown over medium heat.
- 36. Repeat the process with the remaining patties.
