🍰 Crispy Raspberry Rolls with Quark and Cream Filling

Ingredients
- 40 g Yogurt butter (3 level tbsp)
- 1 pinch Salt
- 80 g Wheat flour
- 2 Eggs
- 1 pinch Cream of tartar baking powder
- 1 tbsp Milk (1.5% fat)
- 15 g Sunflower seeds (1 tbsp)
- 125 g Raspberries
- 1 piece Vanilla pod (approx. 3 cm)
- 125 g Low-fat quark
- 30 g Cane sugar (1.5 tbsp)
- 75 ml Whipping cream
Instructions
- 1. Put 125 milliliters of water, a piece of butter, and a pinch of salt into a pot.
- 2. Bring the mixture to a boil on the stove.
- 3. Take the flour and add it all at once to the boiling water.
- 4. Stir the dough vigorously with a cooking spoon until a firm dough ball forms.
- 5. Remove the pot from the heat as soon as the dough separates from the bottom of the pot.
- 6. Let the dough cool down briefly so it is not too hot for the eggs.
- 7. Take the eggs and stir them into the dough one by one.
- 8. Let the finished dough cool down completely.
- 9. Line a baking tray with baking paper.
- 10. Sprinkle the baking powder over the cooled dough.
- 11. Fold the baking powder gently into the dough.
- 12. Fill the dough into a piping bag.
- 13. Insert a star nozzle with a 10 millimeter diameter into the tip of the bag.
- 14. Pipe twelve dough strips about 9 centimeters long onto the baking paper.
- 15. Brush the dough strips thinly with milk.
- 16. Sprinkle sunflower seeds onto the milk-brushed strips.
- 17. Preheat the oven to 200 degrees Celsius (180 degrees Celsius for fan-assisted or gas mark 3).
- 18. Slide the tray onto the middle rack into the oven.
- 19. Bake the strips for about 25 minutes until golden brown.
- 20. Remove the tray from the oven.
- 21. Place the tray on the inverted oven rack.
- 22. Let the dough strips cool down a bit.
- 23. Cut each strip lengthwise using a bread knife or scissors.
- 24. Separate the two halves from each other.
- 25. Let the halves cool down completely.
- 26. Sort through the raspberries and remove any stems or leaves.
- 27. Take a piece of vanilla pod and cut it lengthwise.
- 28. Scrape the vanilla seeds out of the pod with a knife.
- 29. Put the quark into a bowl.
- 30. Add the vanilla seeds and sugar to the quark.
- 31. Mix the quark, vanilla seeds, and sugar until smooth.
- 32. Whip the cream until stiff.
- 33. Gently fold the whipped cream into the quark mixture.
- 34. Spread the quark cream onto the bottom halves of the cooled dough strips.
- 35. Place the raspberries on top of the quark cream.
- 36. Place the top halves of the dough strips on top as lids.
- 37. Serve the rolls immediately or store them covered in the refrigerator.
