🍰 Fruity Raspberry Sorbet

Ingredients
- 200 g Sugar
- 250 g Frozen raspberries
- 2 tbsp Lemon juice
- 300 ml Sparkling wine
- Mint
- 6 tbsp Sugar
- 2 tbsp Water
Instructions
- 1. Put the sugar and 200 milliliters of water into a pot.
- 2. Let the mixture simmer gently for about 15 minutes.
- 3. Remove the pot from the heat.
- 4. Let the syrup cool down completely.
- 5. Thaw the raspberries.
- 6. Save a few whole berries for decoration.
- 7. Puree the remaining berries with the lemon juice.
- 8. Strain the mixture through a fine sieve to remove seeds.
- 9. Stir the puree well with the sparkling wine and the cooled sugar syrup.
- 10. Pour the mixture into a shallow metal bowl.
- 11. Place the bowl in the freezer for at least 4 hours.
- 12. Stir the sorbet frequently with a fork during freezing.
- 13. Place a rolling pin on a work surface.
- 14. Line the work surface with baking paper.
- 15. Put the sugar and 2 tablespoons of water into a small saucepan.
- 16. Bring the mixture to a boil.
- 17. Stir constantly until the water has evaporated.
- 18. Watch as the sugar slowly turns light brown.
- 19. Reduce the heat.
- 20. Remove the pot from the stove immediately once the caramel has taken on a darker brown color.
- 21. Using a spoon, drip the hot caramel directly from the pot onto the rolling pin.
- 22. Let the caramel harden.
- 23. Carefully break the hardened caramel into 4 equal pieces.
- 24. Scoop balls of the finished sorbet.
- 25. Distribute them into glasses.
- 26. Decorate with the fresh raspberries and the caramel pieces.
- 27. Garnish with mint leaves.
