  1. 1. Put the sugar and 200 milliliters of water into a pot.
  2. 2. Let the mixture simmer gently for about 15 minutes.
  3. 3. Remove the pot from the heat.
  4. 4. Let the syrup cool down completely.
  5. 5. Thaw the raspberries.
  6. 6. Save a few whole berries for decoration.
  7. 7. Puree the remaining berries with the lemon juice.
  8. 8. Strain the mixture through a fine sieve to remove seeds.
  9. 9. Stir the puree well with the sparkling wine and the cooled sugar syrup.
  10. 10. Pour the mixture into a shallow metal bowl.
  11. 11. Place the bowl in the freezer for at least 4 hours.
  12. 12. Stir the sorbet frequently with a fork during freezing.
  13. 13. Place a rolling pin on a work surface.
  14. 14. Line the work surface with baking paper.
  15. 15. Put the sugar and 2 tablespoons of water into a small saucepan.
  16. 16. Bring the mixture to a boil.
  17. 17. Stir constantly until the water has evaporated.
  18. 18. Watch as the sugar slowly turns light brown.
  19. 19. Reduce the heat.
  20. 20. Remove the pot from the stove immediately once the caramel has taken on a darker brown color.
  21. 21. Using a spoon, drip the hot caramel directly from the pot onto the rolling pin.
  22. 22. Let the caramel harden.
  23. 23. Carefully break the hardened caramel into 4 equal pieces.
  24. 24. Scoop balls of the finished sorbet.
  25. 25. Distribute them into glasses.
  26. 26. Decorate with the fresh raspberries and the caramel pieces.
  27. 27. Garnish with mint leaves.
