  1. 1. Put the sugar into a pot.
  2. 2. Pour 200 milliliters of water into it.
  3. 3. Let the mixture simmer gently for about 15 minutes.
  4. 4. Remove the pot from the heat.
  5. 5. Allow the syrup to cool down completely.
  6. 6. Wash the raspberries thoroughly.
  7. 7. Remove all stems from the berries.
  8. 8. Set aside a few particularly nice berries for decoration.
  9. 9. Take the remaining raspberries.
  10. 10. Puree them together with the lemon juice until smooth.
  11. 11. Press the puree through a fine sieve.
  12. 12. Remove the seeds and fibers.
  13. 13. Gently stir the strained fruit pulp with the sparkling wine.
  14. 14. Add the cooled sugar syrup.
  15. 15. Pour the entire mixture into a shallow metal bowl.
  16. 16. Place the bowl in the freezer for at least 4 hours.
  17. 17. Take the mixture out every 30 to 60 minutes.
  18. 18. Stir it vigorously with a fork.
  19. 19. This prevents large ice crystals from forming.
  20. 20. Alternatively, you can finish the mixture in an ice cream maker.
