🍽️ Fruity Raspberry Sorbet

Ingredients
- 200 g Sugar
- 250 g Raspberries
- 2 tbsp Lemon juice
- 300 ml Sparkling wine
Instructions
- 1. Put the sugar into a pot.
- 2. Pour 200 milliliters of water into it.
- 3. Let the mixture simmer gently for about 15 minutes.
- 4. Remove the pot from the heat.
- 5. Allow the syrup to cool down completely.
- 6. Wash the raspberries thoroughly.
- 7. Remove all stems from the berries.
- 8. Set aside a few particularly nice berries for decoration.
- 9. Take the remaining raspberries.
- 10. Puree them together with the lemon juice until smooth.
- 11. Press the puree through a fine sieve.
- 12. Remove the seeds and fibers.
- 13. Gently stir the strained fruit pulp with the sparkling wine.
- 14. Add the cooled sugar syrup.
- 15. Pour the entire mixture into a shallow metal bowl.
- 16. Place the bowl in the freezer for at least 4 hours.
- 17. Take the mixture out every 30 to 60 minutes.
- 18. Stir it vigorously with a fork.
- 19. This prevents large ice crystals from forming.
- 20. Alternatively, you can finish the mixture in an ice cream maker.
