  1. 1. Thoroughly wash the raspberries and remove any stems or leaves.
  2. 2. Place the raspberries in a pot.
  3. 3. Squeeze the juice of one lemon and grate some fine zest from it.
  4. 4. Add the lemon juice and zest to the raspberries in the pot.
  5. 5. Place the pot on the stove and heat the mixture until it starts to bubble.
  6. 6. Stir the pectin sugar into the boiling raspberry mixture.
  7. 7. Let the jam boil vigorously for exactly one minute.
  8. 8. Remove the pot from the heat.
  9. 9. Carefully pour the hot jam into clean, prepared jars.
  10. 10. Seal the jars tightly immediately to preserve them.
