  1. 1. Carefully sort the raspberries and remove any damaged berries.
  2. 2. Wash the fruit only if absolutely necessary to avoid losing juice.
  3. 3. Place the raspberries in a bowl.
  4. 4. Pour the lemon juice over the fruit.
  5. 5. Slice the vanilla pod lengthwise and add it to the bowl as well.
  6. 6. Sprinkle the pectin sugar over the mixture.
  7. 7. Stir everything well until the sugar is distributed.
  8. 8. Let the mixture stand for about 30 minutes.
  9. 9. Place the pot with the mixture on the stove.
  10. 10. Heat the mixture while stirring constantly until it boils.
  11. 11. Let the jam boil vigorously for about 4 minutes.
  12. 12. Continue stirring while cooking to prevent burning.
  13. 13. Perform a setting test to check if the jam is firm.
  14. 14. Remove the pot from the heat as soon as the setting test is successful.
  15. 15. Fish out the vanilla pod from the warm jam.
  16. 16. Rinse the jam jars with hot water.
  17. 17. Fill the hot jam immediately to the brim into the warm jars.
  18. 18. Seal the jars immediately tightly with screw-top lids.
  19. 19. Let the sealed jars cool down at room temperature.
