🍰 Refreshing Raspberry Cold Soup

Ingredients
- 100 g Sugar
- 200 ml Water
- 100 ml Red wine
- 250 g fresh raspberries
- 1 tbsp finely chopped mint
- Mint (for garnish)
Instructions
- 1. Put sugar, wine, water, and the chopped mint into a pot.
- 2. Let the mixture simmer and reduce for about 5 to 8 minutes over medium heat.
- 3. Wash the raspberries and pick out any unripe or damaged berries.
- 4. Add the raspberries to the pot and cook them for another 2 to 3 minutes.
- 5. Stir everything well once and then let the mixture cool down.
- 6. Place the soup in the refrigerator for about 2 to 3 hours.
- 7. Serve the cold soup garnished with fresh mint leaves.
- 8. Optionally garnish the dish with a scoop of vanilla or chocolate ice cream.
