  1. 1. Put sugar, wine, water, and the chopped mint into a pot.
  2. 2. Let the mixture simmer and reduce for about 5 to 8 minutes over medium heat.
  3. 3. Wash the raspberries and pick out any unripe or damaged berries.
  4. 4. Add the raspberries to the pot and cook them for another 2 to 3 minutes.
  5. 5. Stir everything well once and then let the mixture cool down.
  6. 6. Place the soup in the refrigerator for about 2 to 3 hours.
  7. 7. Serve the cold soup garnished with fresh mint leaves.
  8. 8. Optionally garnish the dish with a scoop of vanilla or chocolate ice cream.
