  1. 1. Beat the butter together with the sugar, a pinch of salt, and the vanilla sugar until creamy.
  2. 2. Stir the egg yolk into the butter mixture.
  3. 3. Add the cognac and the grated nutmeg.
  4. 4. Mix everything well with the flour.
  5. 5. Shape the dough into two balls.
  6. 6. Cover the balls.
  7. 7. Place them in the refrigerator for at least two hours.
  8. 8. Roll each dough ball between two sheets of baking paper to a thickness of 3 to 4 millimeters.
  9. 9. Cut out the cookies using a heart-shaped cutter (about 3.5 centimeters in diameter).
  10. 10. Place the cookies on a baking sheet lined with baking paper.
  11. 11. Bake them in the preheated oven at 180 degrees on the middle rack for 10 to 12 minutes until golden yellow.
  12. 12. Let the cookies cool down briefly on the baking sheet first.
  13. 13. Then remove them from the sheet.
  14. 14. Let them cool completely on a cake rack.
  15. 15. Warm the jam in a small saucepan.
  16. 16. Spread the warm jam on the bottom of half of the cookies.
  17. 17. Place the remaining cookies on top as lids.
  18. 18. Stir the powdered sugar with the lemon juice to form a smooth glaze.
  19. 19. Take a small part of the white glaze aside.
  20. 20. Color the rest of the glaze with food coloring.
  21. 21. Coat the cookies with it.
  22. 22. Let the cookies dry.
  23. 23. Fill the reserved white glaze into a piping bag.
  24. 24. Cut off a small corner.
  25. 25. Decorate the cookies with it.
