  2. 2. Use a melon baller to scoop out small balls from the flesh.
  3. 3. Weigh out 100 grams of the remaining fruit flesh.
  4. 4. Puree this 100 grams of fruit flesh until smooth.
  5. 5. Soak the gelatin in cold water.
  6. 6. Wash the limes with hot water and dry them.
  7. 7. Grate the zest of the limes.
  8. 8. Squeeze the juice from the limes.
  9. 9. Rinse the basil and shake it dry.
  10. 10. Cut the basil leaves into thin strips.
  11. 11. Peel the ginger and grate it finely.
  12. 12. Warm 100 milliliters of orange juice with the melon puree in a pot.
  13. 13. Squeeze out the soaked gelatin and dissolve it in the warm mixture.
  14. 14. Remove the pot from the heat.
  15. 15. Stir in the lime juice, lime zest, basil, a pinch of salt, and paprika powder.
  16. 16. Crumble or cube the bread.
  17. 17. Fry the bread pieces in hot oil in a pan until crispy.
  18. 18. Season the bread pieces with salt and cumin.
  19. 19. Let the toasted bread crumbs drain on kitchen paper.
  20. 20. Sprinkle the jelly with the toasted bread crumbs.
  21. 21. Serve the dish.
