🍽️ Savory Melon Jelly

Ingredients
- 1 cantaloupe melon
- 6 leaves gelatin
- 2 unpeeled limes
- 1 handful basil
- 15 g ginger
- 500 ml orange juice
- salt
- 1 pinch paprika powder (sweet)
- 2 slices white bread
- 4 tbsp olive oil
- 1 pinch ground cumin
Instructions
- 1. Cut the melon in half and remove the seeds.
- 2. Use a melon baller to scoop out small balls from the flesh.
- 3. Weigh out 100 grams of the remaining fruit flesh.
- 4. Puree this 100 grams of fruit flesh until smooth.
- 5. Soak the gelatin in cold water.
- 6. Wash the limes with hot water and dry them.
- 7. Grate the zest of the limes.
- 8. Squeeze the juice from the limes.
- 9. Rinse the basil and shake it dry.
- 10. Cut the basil leaves into thin strips.
- 11. Peel the ginger and grate it finely.
- 12. Warm 100 milliliters of orange juice with the melon puree in a pot.
- 13. Squeeze out the soaked gelatin and dissolve it in the warm mixture.
- 14. Remove the pot from the heat.
- 15. Stir in the lime juice, lime zest, basil, a pinch of salt, and paprika powder.
- 16. Crumble or cube the bread.
- 17. Fry the bread pieces in hot oil in a pan until crispy.
- 18. Season the bread pieces with salt and cumin.
- 19. Let the toasted bread crumbs drain on kitchen paper.
- 20. Sprinkle the jelly with the toasted bread crumbs.
- 21. Serve the dish.
