  1. 1. Carefully separate the eggs. Place the egg yolks in one bowl and the egg whites in another.
  2. 2. Heat the flour and butter in a pot. Let the mixture foam up.
  3. 3. Stir the milk into the hot butter-flour mixture.
  4. 4. Simmer the mixture for about 5 to 6 minutes while stirring constantly.
  5. 5. Remove the pot from the heat and let the mixture cool down briefly.
  6. 6. Stir the egg yolks and grated cheese into the cooled mixture.
  7. 7. Season the mixture with salt, pepper, and ground nutmeg.
  8. 8. Whip the egg whites until they form stiff peaks.
  9. 9. Gently fold half of the whipped egg whites into the cheese mixture.
  10. 10. Finely chop the fresh herbs.
  11. 11. Mix the remaining egg whites with the chopped herbs.
  12. 12. Gently fold the egg white-herb mixture into the remaining base.
  13. 13. Butter the soufflé dish.
  14. 14. Coat the buttered dish with breadcrumbs to prevent sticking.
  15. 15. Fill the soufflé mixture into the prepared dish.
  16. 16. Preheat the oven to 200 degrees Celsius.
  17. 17. Bake the soufflé in the preheated oven for about 40 minutes until golden brown.
  18. 18. Serve the soufflé immediately so it does not collapse.
