🍽️ Savory Herb Soufflé

Ingredients
- 50 g Butter
- 5 Eggs
- 175 g grated cheese (e.g. Emmental, Greyerzer)
- 250 ml Milk
- 50 g Flour
- 1 bunch mixed herbs (e.g. borage, cress, parsley, chives,...)
- Salt
- white pepper
- Nutmeg (freshly grated)
- Butter (for the mold)
Instructions
- 1. Carefully separate the eggs. Place the egg yolks in one bowl and the egg whites in another.
- 2. Heat the flour and butter in a pot. Let the mixture foam up.
- 3. Stir the milk into the hot butter-flour mixture.
- 4. Simmer the mixture for about 5 to 6 minutes while stirring constantly.
- 5. Remove the pot from the heat and let the mixture cool down briefly.
- 6. Stir the egg yolks and grated cheese into the cooled mixture.
- 7. Season the mixture with salt, pepper, and ground nutmeg.
- 8. Whip the egg whites until they form stiff peaks.
- 9. Gently fold half of the whipped egg whites into the cheese mixture.
- 10. Finely chop the fresh herbs.
- 11. Mix the remaining egg whites with the chopped herbs.
- 12. Gently fold the egg white-herb mixture into the remaining base.
- 13. Butter the soufflé dish.
- 14. Coat the buttered dish with breadcrumbs to prevent sticking.
- 15. Fill the soufflé mixture into the prepared dish.
- 16. Preheat the oven to 200 degrees Celsius.
- 17. Bake the soufflé in the preheated oven for about 40 minutes until golden brown.
- 18. Serve the soufflé immediately so it does not collapse.
