🍽️ Savory Yeast Bread

Ingredients
- 150 ml water
- 1 cube yeast
- 50 g whole wheat flour
- 150 ml oat drink (oat milk)
- 300 g wheat flour Type 405
- 150 g rye flour Type 997
- 1 tsp salt
- 80 g cherry tomatoes
- 50 g green bell peppers
- 50 g yellow bell peppers
- 1 red onion (approx. 30g)
- 4 tbsp fresh marjoram
- 6 tbsp olive oil
- 3 tbsp flaxseeds
- 3 tbsp sesame seeds
Instructions
- 1. Place 6 tablespoons of lukewarm water in a mixing bowl.
- 2. Crumble the yeast into the water.
- 3. Mix the water and yeast with a fork.
- 4. Stir in the whole wheat flour.
- 5. Cover the dough.
- 6. Let the dough rise in a warm place for 1 hour.
- 7. Warm the oat drink.
- 8. Add the oat drink to the dough.
- 9. Add wheat flour to the dough.
- 10. Add rye flour to the dough.
- 11. Add 100 ml of lukewarm water to the dough.
- 12. Add salt to the dough.
- 13. Knead everything by hand or with a dough hook until smooth.
- 14. Knead the dough for a long time until it releases from the sides of the bowl.
- 15. Add a little flour if needed.
- 16. Cover the dough.
- 17. Let the dough rise in a warm place for 2 hours.
- 18. Clean the tomatoes.
- 19. Wash the tomatoes.
- 20. Clean the peppers.
- 21. Wash the peppers.
- 22. Cut the tomatoes into small cubes.
- 23. Cut the peppers into small cubes.
- 24. Peel the onion.
- 25. Dice the onion.
- 26. Wash the marjoram.
- 27. Shake the marjoram dry.
- 28. Pluck the marjoram leaves.
- 29. Chop the marjoram leaves finely.
- 30. Mix the vegetables with olive oil.
- 31. Mix the vegetables with flaxseeds.
- 32. Mix the vegetables with marjoram.
- 33. Flour the work surface.
- 34. Roll out the bread dough into a rectangle (approx. 40 cm x 30 cm).
- 35. Spread the vegetable-oil mixture evenly over the dough.
- 36. Carefully roll up the dough starting from the short edge.
- 37. Cut the roll lengthwise down the middle.
- 38. Leave one end connected.
- 39. Twist the two halves around each other.
- 40. Sprinkle the bread with sesame seeds.
- 41. Let the bread rest for 10 minutes.
- 42. Grease the loaf pan.
- 43. Place the dough in the loaf pan.
- 44. Preheat the oven to 200°C (convection 180°C; gas mark 3).
- 45. Place a heatproof bowl of water on the bottom of the oven.
- 46. Bake the bread for 50 minutes.
- 47. Remove the finished bread from the pan.
- 48. Let the bread cool.
