🍽️ Savory Quark Dumplings with Leek Sauce

Ingredients
- 1 stalk leek
- 1 clove garlic
- 1 tsp sunflower oil
- 100 ml sweet white wine
- 100 ml vegetable broth
- 200 g cream cheese (0.2% fat)
- 100 ml whipping cream (min. 30%)
- salt
- pepper
- 2 carrots
- 750 g low-fat quark
- 3 eggs
- 4 tbsp crème légère (15%)
- 200 g flour
- 150 g breadcrumbs
- nutmeg
- parsley (for garnish)
Instructions
- 1. Halve the leek lengthwise and clean it.
- 2. Cut the green part of the leek into very thin strips about 6 to 8 centimeters long.
- 3. Cut the remaining white part of the leek into fine rings.
- 4. Peel the garlic clove and press it through.
- 5. Sauté the leek rings together with the pressed garlic in oil.
- 6. Pour in the wine and the vegetable broth.
- 7. Let the liquid simmer until it has reduced by about half, which takes about 5 minutes.
- 8. Stir the cream cheese into the sauce.
- 9. Continue to simmer the sauce until the cream cheese has completely dissolved.
- 10. Add the cream to the sauce.
- 11. If necessary, let the sauce reduce briefly again.
- 12. Season the sauce with salt and pepper.
- 13. Keep the sauce warm on the lowest heat setting.
- 14. Let the quark drain.
- 15. Stir the drained quark smoothly with the eggs and crème légère.
- 16. Peel the carrots.
- 17. Grate the carrots finely.
- 18. Mix the grated carrots, flour, and breadcrumbs into the quark mixture.
- 19. Season the mixture with salt, pepper, and nutmeg.
- 20. Form 12 dumplings from the dough.
- 21. Place the dumplings in lightly boiling salted water.
- 22. Reduce the heat.
- 23. Let the dumplings cook gently for about 15 minutes.
- 24. Avoid vigorous boiling so the dumplings do not fall apart.
- 25. Remove the dumplings from the water using a slotted spoon.
- 26. Let the dumplings drain well.
- 27. Arrange the dumplings on pre-warmed plates.
- 28. Pour the cream sauce over the dumplings.
- 29. Sprinkle the dumplings with the green leek strips cut earlier.
- 30. Garnish the dish with parsley.
- 31. Serve the dumplings hot.
