🍽️ Savory Pancake Cake with Vegetables and Basil

Ingredients
- 2 Eggs
- 200 g Flour
- 1 tsp. Baking Powder
- 350 ml Milk
- 2 tbsp. Parmesan
- Salt
- 50 g Basil
- 3 tbsp. Butter (for frying)
- 100 g diced Bacon
- 1 handful Spinach Leaves
- 2 Onions
- 1 Yellow Bell Pepper
- 2 Tomatoes
- 100 g Mushrooms
- Pepper (from the mill)
- 1 ball Mozzarella (125 g)
Instructions
- 1. Whisk the eggs, flour, baking powder, and milk together until you have a smooth batter.
- 2. Stir in the parmesan and a pinch of salt.
- 3. Let the batter rest for about 20 minutes.
- 4. Pick the basil leaves off the stems.
- 5. Set aside a few leaves for garnish.
- 6. Roughly chop the remaining basil.
- 7. Fold the chopped basil into the pancake batter.
- 8. Heat some butter in a non-stick pan.
- 9. Fry three pancakes one after the other.
- 10. Preheat the oven to 250 degrees Celsius with top and bottom heat.
- 11. Wash the spinach and remove the tough stems.
- 12. Let the spinach drain well.
- 13. Roughly chop the spinach.
- 14. Peel the onions.
- 15. Slice the onions into thin rings.
- 16. Wash the bell pepper.
- 17. Halve the bell pepper and remove the inside.
- 18. Dice the bell pepper into small pieces.
- 19. Wash the tomatoes.
- 20. Quarter the tomatoes.
- 21. Remove the core of the tomatoes.
- 22. Dice the tomatoes into small pieces.
- 23. Clean the mushrooms.
- 24. Wipe the mushrooms with a kitchen towel.
- 25. Slice the mushrooms into thin slices.
- 26. Render the bacon in a pan without adding extra fat.
- 27. Add the onions, bell pepper, and mushrooms.
- 28. Sauté the vegetables lightly.
- 29. Season the vegetables with salt and pepper.
- 30. Add the tomatoes and spinach.
- 31. Toss the vegetables briefly.
- 32. Taste the filling and adjust seasoning if needed.
- 33. Drain the mozzarella.
- 34. Dice the mozzarella into small pieces.
- 35. Mix the mozzarella into the vegetables.
- 36. Place two pancakes on a baking sheet lined with baking paper.
- 37. Spread the vegetable filling over the pancakes.
- 38. Broil the cake briefly under the preheated grill.
- 39. Place the third pancake on top.
- 40. Garnish the cake with the reserved basil leaves.
- 41. Serve the cake.
