🍽️ Savory Pancakes with Fried Chanterelles and Sour Cream

Ingredients
- 30 g small onions (1 small onion)
- 1 small garlic clove
- salt
- 1 bunch chives
- 0.5 lemon
- 40 g sour cream (10 % fat)
- 80 g double cream cheese
- 40 g crème fraîche (30 % fat)
- pepper
- 150 g spelt flour Type 1050
- 2 tsp baking powder
- 200 ml milk (3.5 % fat)
- 4 tsp rapeseed oil
- 200 g herb oyster mushrooms
Instructions
- 1. Peel the onion and the garlic.
- 2. Dice the onion finely.
- 3. Halve the garlic.
- 4. Press the garlic through a garlic press.
- 5. Alternatively: Mash the garlic with 1 pinch of salt using the back of a sharp knife.
- 6. Pour some water into a small pot.
- 7. Bring the water to a boil.
- 8. Add half of the diced onions to the boiling water.
- 9. Let the onions boil briefly.
- 10. Drain the onions through a sieve.
- 11. Rinse the onions under cold water.
- 12. Pat the onions dry.
- 13. Wash the chives.
- 14. Dry the chives.
- 15. Cut the chives into fine rings.
- 16. Halve a lemon.
- 17. Squeeze the lemon half.
- 18. Mix the drained onions, the garlic, and the lemon juice.
- 19. Add 2 tbsp of the chive rings to the mixture.
- 20. Season the sour cream with salt and pepper.
- 21. Cover the sour cream.
- 22. Let the sour cream steep in the refrigerator for at least 1 hour.
- 23. Mix the dry ingredients for the pancake batter in a bowl.
- 24. Add the milk to the batter.
- 25. Mix the batter until it is homogeneous.
- 26. Heat 2 tsp of oil in a non-stick pan.
- 27. Add 1 tbsp of batter to the pan.
- 28. Bake the pancakes over medium heat.
- 29. Fry the pancakes for about 3–4 minutes on both sides until golden brown.
- 30. Clean the chanterelles.
- 31. Halve or quarter the mushrooms depending on their size.
- 32. Heat 1 tsp of oil in a small pan.
- 33. Fry the chanterelles over medium heat.
- 34. Fry the mushrooms for about 3–4 minutes.
- 35. Season the mushrooms with salt and pepper.
- 36. Place the pancakes on two plates.
- 37. Add the sour cream to the pancakes.
- 38. Add 2 tbsp of chive rings to the pancakes.
- 39. Add the fried chanterelles to the pancakes.
- 40. Serve the pancakes.
