  2. 2. Dice the onion finely.

  4. 4. Press the garlic through a garlic press.
  5. 5. Alternatively: Mash the garlic with 1 pinch of salt using the back of a sharp knife.
  6. 6. Pour some water into a small pot.
  7. 7. Bring the water to a boil.
  8. 8. Add half of the diced onions to the boiling water.
  9. 9. Let the onions boil briefly.
  10. 10. Drain the onions through a sieve.
  11. 11. Rinse the onions under cold water.
  12. 12. Pat the onions dry.
  13. 13. Wash the chives.
  14. 14. Dry the chives.
  15. 15. Cut the chives into fine rings.
  16. 16. Halve a lemon.
  17. 17. Squeeze the lemon half.
  18. 18. Mix the drained onions, the garlic, and the lemon juice.
  19. 19. Add 2 tbsp of the chive rings to the mixture.
  20. 20. Season the sour cream with salt and pepper.
  21. 21. Cover the sour cream.
  22. 22. Let the sour cream steep in the refrigerator for at least 1 hour.
  23. 23. Mix the dry ingredients for the pancake batter in a bowl.
  24. 24. Add the milk to the batter.
  25. 25. Mix the batter until it is homogeneous.
  26. 26. Heat 2 tsp of oil in a non-stick pan.
  27. 27. Add 1 tbsp of batter to the pan.
  28. 28. Bake the pancakes over medium heat.
  29. 29. Fry the pancakes for about 3–4 minutes on both sides until golden brown.

  31. 31. Halve or quarter the mushrooms depending on their size.
  32. 32. Heat 1 tsp of oil in a small pan.
  33. 33. Fry the chanterelles over medium heat.
  34. 34. Fry the mushrooms for about 3–4 minutes.
  35. 35. Season the mushrooms with salt and pepper.
  36. 36. Place the pancakes on two plates.
  37. 37. Add the sour cream to the pancakes.
  38. 38. Add 2 tbsp of chive rings to the pancakes.
  39. 39. Add the fried chanterelles to the pancakes.
  40. 40. Serve the pancakes.
