🍰 Savory Muffins with Olives and Feta

Ingredients
- 150 g Feta (45 % fat in dry matter)
- 50 g black olives (pitted)
- 4 tbsp pine nuts
- 300 g spelt flour Type 1050
- 0.5 tsp salt
- 3 tsp baking powder
- 5 tbsp olive oil
- 300 ml milk (3.5 % fat)
- 1 tsp dried oregano
- 1 egg
Instructions
- 1. Line a 12-cup muffin tin with paper liners.
- 2. Cut the feta cheese into small cubes.
- 3. Drain the olives.
- 4. Finely chop the olives.
- 5. Finely chop the pine nuts.
- 6. Mix the spelt flour with salt and baking powder in a bowl.
- 7. Whisk the olive oil, olives, pine nuts, milk, oregano, and egg together in a large mixing bowl.
- 8. Stir the flour mixture into the wet mixture quickly.
- 9. Gently fold half of the feta cubes into the batter.
- 10. Divide the batter evenly among the paper liners.
- 11. Sprinkle the remaining feta on top of the muffins.
- 12. Preheat the oven to 200 degrees Celsius (180 degrees Celsius with fan or gas mark 3).
- 13. Bake the muffins for about 20 minutes until golden brown.
