🍽️ Fresh Herring Salad with Potatoes

Ingredients
- 400 g potatoes
- 3 endive leaves
- 2 spring onions
- 2 tomatoes
- 8 matjes fillets
- 4 tbsp white wine vinegar
- salt
- pepper
- 1 pinch sugar
- 3 tbsp germ oil
- 1 tbsp parsley
- 1 tbsp dill tips
- 125 g whipping cream
Instructions
- 1. Peel the potatoes and wash them thoroughly. Boil them in salted water for about 25 minutes until tender. Drain the water, let the potatoes drip dry, cut them into bite-sized pieces, and let them cool down completely.
- 2. Wash the salad greens thoroughly, pat them dry with a kitchen towel, and cut them into thin strips. Wash the spring onions, trim off the tough ends, and slice them into thin rings. Wash the tomatoes and cut them into eighths.
- 3. Pat the matjes fillets dry and cut them into strips about 3 centimeters wide. Whisk vinegar, salt, pepper, sugar, and oil together in a bowl and adjust the seasoning to taste. Now gently mix the dressing with the cooled potatoes, the matjes, the tomatoes, and the salad.
- 4. Serve the herring salad on plates. Mix the parsley and dill with the sour cream and distribute this mixture evenly over the finished salad.
