  1. 1. Slice the gherkins lengthwise.
  2. 2. Fan the gherkins out slightly.
  3. 3. Wash the bell pepper thoroughly.
  4. 4. Remove the stem and the inside of the bell pepper.
  5. 5. Cut the bell pepper flesh into 12 thin strips.
  6. 6. Clean the mushrooms.
  7. 7. Heat butter in a pan.
  8. 8. Sauté the mushrooms in the hot butter for 2 to 3 minutes while stirring.
  9. 9. Pat the herring fillets dry with a kitchen towel.
  10. 10. Place the fillets side by side on a cutting board.
  11. 11. Make sure the skin of the fillets is facing downwards.
  12. 12. Top each fillet with some cress.
  13. 13. Place a fanned-out gherkin on each fillet.
  14. 14. Add one sautéed mushroom.
  15. 15. Place a strip of bell pepper on top.
  16. 16. Roll the topped fillets up tightly.
  17. 17. Secure each roll with a wooden skewer.
  18. 18. Place the finished fish roulades in a serving dish.
  19. 19. Garnish the roulades with fresh chives.
  20. 20. Serve the roulades immediately.
