🍽️ Herring Roulades with Mushrooms and Cucumbers

Ingredients
- 12 Cornichons
- 0.5 red bell pepper
- 12 chanterelles
- 1 tbsp butter
- 12 herring fillets (pickled)
- 2 tbsp cress
- chives (for garnish)
Instructions
- 1. Slice the gherkins lengthwise.
- 2. Fan the gherkins out slightly.
- 3. Wash the bell pepper thoroughly.
- 4. Remove the stem and the inside of the bell pepper.
- 5. Cut the bell pepper flesh into 12 thin strips.
- 6. Clean the mushrooms.
- 7. Heat butter in a pan.
- 8. Sauté the mushrooms in the hot butter for 2 to 3 minutes while stirring.
- 9. Pat the herring fillets dry with a kitchen towel.
- 10. Place the fillets side by side on a cutting board.
- 11. Make sure the skin of the fillets is facing downwards.
- 12. Top each fillet with some cress.
- 13. Place a fanned-out gherkin on each fillet.
- 14. Add one sautéed mushroom.
- 15. Place a strip of bell pepper on top.
- 16. Roll the topped fillets up tightly.
- 17. Secure each roll with a wooden skewer.
- 18. Place the finished fish roulades in a serving dish.
- 19. Garnish the roulades with fresh chives.
- 20. Serve the roulades immediately.
