Ingredients
- 8 small herring double fillets (kitchen-ready)
- 2 tbsp lemon juice
- salt
- pepper (from the mill)
- 1 onion
- 3 tbsp butter
- 200 g whipping cream
- 4 tbsp breadcrumbs
- 4 tbsp Gruyère cheese (freshly grated)

Instructions
- 1. Rinse the fish fillets under running water.
- 2. Pat the fillets dry with a kitchen towel.
- 3. Season the fish with salt and pepper.
- 4. Drizzle some lemon juice over the fillets.
- 5. Roll the fish fillets up tightly.
- 6. Secure the rolls with toothpicks.
- 7. Peel the onion.
- 8. Dice the onion finely.
- 9. Heat about one tablespoon of butter in a pan.
- 10. Sauté the onion cubes until translucent.
- 11. Pour the cream over the onions.
- 12. Let the sauce come to a brief boil.
- 13. Season the sauce with salt and pepper.
- 14. Add a little lemon juice to the sauce.
- 15. Grease a baking dish with some butter.
- 16. Place the fish rolls into the dish.
- 17. Pour the cream sauce over the fish.
- 18. Mix the breadcrumbs with the grated cheese.
- 19. Spread the cheese breadcrumb mixture evenly over the gratin.
- 20. Cut the remaining butter into small flakes.
- 21. Distribute the butter flakes on the surface.
- 22. Preheat the oven to 200 degrees Celsius.
- 23. Bake the gratin in the oven for about 25 minutes.
