🍽️ Baked Herring with Tomatoes

Ingredients
- 400 g herring fillet (with skin, boneless)
- salt
- pepper (from the mill)
- 1 tsp chopped dill tips
- 1 tsp chopped parsley
- 1 tsp chive rings
- 2 tbsp mustard
- 125 g whipping cream
- 100 g feta
- 2 tbsp grated parmesan
- 100 g black olives (pitted)
- 125 g cherry tomatoes
- fresh thyme leaves (for garnish)
- fat (for the dish)
Instructions
- 1. Slice the olives into thin rounds. Wash the tomatoes, pat them dry, and cut them in half.
- 2. Rinse the herring fillets briefly under cold running water and pat them dry. Cut the fillets diagonally into strips about 3 centimeters wide and place them side by side in a greased baking dish. Season with salt and pepper.
- 3. Mix the herbs, mustard, and cream. Spread this mixture evenly over the fish strips. Place the dish in the preheated oven at 200 degrees Celsius and bake for about 15 minutes, until the surface is lightly golden brown.
- 4. Remove the dish from the oven. Arrange the tomato halves and olives on top. Crumble the feta cheese and sprinkle it along with the grated parmesan over everything.
- 5. Put the dish back in the oven and bake for another 10 minutes, until the cheese is melted and bubbly. Serve the dish directly in the baking dish, garnished with fresh thyme sprigs.
