🍽️ Classic Herring Casserole with Cheese and Egg

Ingredients
- 250 g Cocktail tomatoes
- 4 Herrings (kitchen-ready, with skin, without head)
- Salt
- Pepper (from the mill)
- 1 bunch Herbs (e.g. parsley, mint, lemon balm, basil, thyme)
- 100 g Cheese (e.g. Gruyere)
- 300 ml Whipping cream
- 3 Eggs
- 1 pinch Organic lemon zest
- 4 tbsp Crème fraîche
- Nutmeg
- 1 tsp Butter
Instructions
- 1. Wash the tomatoes thoroughly.
- 2. Cut the tomatoes in half.
- 3. Remove the hard stem base from the tomato halves.
- 4. Rinse the herring fillets under running water.
- 5. Pat the herring fillets dry with a kitchen towel.
- 6. Season the herring fillets inside and out with salt and pepper.
- 7. Wash the fresh herbs.
- 8. Shake the herbs dry.
- 9. Pluck the fine leaves off the tough stems.
- 10. Cut the herbs into very fine strips.
- 11. Grate the cheese finely.
- 12. Mix the grated cheese with the cream.
- 13. Add the eggs to the cheese-cream mixture.
- 14. Grate the lemon zest finely.
- 15. Add the lemon zest to the mixture.
- 16. Add half of the chopped herbs to the mixture.
- 17. Stir the crème fraîche into the mixture.
- 18. Season the sauce with salt, pepper, and nutmeg.
- 19. Grease a baking dish with butter.
- 20. Place the seasoned herring fillets in the bottom of the dish.
- 21. Pour the egg-cream sauce over the herring fillets.
- 22. Place the tomato halves on top of the sauce.
- 23. Preheat the oven to 180 °C (convection 160 °C or gas mark 2–3).
- 24. Bake the casserole in the oven for about 25 to 30 minutes.
- 25. Sprinkle the finished casserole with the remaining herbs.
