  1. 1. Wash the tomatoes thoroughly.
  2. 2. Cut the tomatoes in half.
  3. 3. Remove the hard stem base from the tomato halves.
  4. 4. Rinse the herring fillets under running water.
  5. 5. Pat the herring fillets dry with a kitchen towel.
  6. 6. Season the herring fillets inside and out with salt and pepper.
  7. 7. Wash the fresh herbs.
  8. 8. Shake the herbs dry.
  9. 9. Pluck the fine leaves off the tough stems.
  10. 10. Cut the herbs into very fine strips.
  11. 11. Grate the cheese finely.
  12. 12. Mix the grated cheese with the cream.
  13. 13. Add the eggs to the cheese-cream mixture.
  14. 14. Grate the lemon zest finely.
  15. 15. Add the lemon zest to the mixture.
  16. 16. Add half of the chopped herbs to the mixture.
  17. 17. Stir the crème fraîche into the mixture.
  18. 18. Season the sauce with salt, pepper, and nutmeg.
  19. 19. Grease a baking dish with butter.
  20. 20. Place the seasoned herring fillets in the bottom of the dish.
  21. 21. Pour the egg-cream sauce over the herring fillets.
  22. 22. Place the tomato halves on top of the sauce.
  23. 23. Preheat the oven to 180 °C (convection 160 °C or gas mark 2–3).
  24. 24. Bake the casserole in the oven for about 25 to 30 minutes.
  25. 25. Sprinkle the finished casserole with the remaining herbs.
