  4. 4. Drain the water and rinse the potatoes briefly with cold water to cool them down.
  5. 5. Peel the potatoes and cut each one in half.
  6. 6. Wash the beans and remove the hard ends.
  7. 7. Cut the beans diagonally into pieces about 3 centimeters long.
  8. 8. Cook the beans in boiling salted water for about 10 minutes.
  9. 9. Drain the beans, rinse them with cold water, and let them drain well.
  10. 10. Peel the shallot.
  11. 11. Cut the shallot into thin rings.
  12. 12. Wash the apples.
  13. 13. Quarter the apples and remove the core.
  14. 14. Cut the apple flesh into thin strips.
  15. 15. Mix the apple strips immediately with lemon juice to prevent them from browning.
  16. 16. Rinse the fish fillets briefly under cold water.
  17. 17. Pat the fillets dry with a kitchen towel.
  18. 18. Cut the fish fillets into pieces about 3 centimeters long.
  19. 19. Whisk vinegar, vegetable broth, salt, pepper, sugar, mustard, and oil together in a small bowl.
  20. 20. Adjust the seasoning of the sauce with remaining spices as needed.
  21. 21. Put all prepared ingredients into a large bowl.
