🍽️ Fresh Herring Salad with Potatoes and Apples

Ingredients
- 500 g potatoes
- 400 g beans
- salt
- pepper (from the mill)
- 1 shallot
- 2 apples
- lemon (juice)
- 8 Bismarck herring fillets
- 3 tbsp white wine vinegar
- 3 tbsp vegetable broth
- 5 tbsp rapeseed oil
- 0.5 tsp sugar
- 0.5 tsp mustard
- dill tips (for garnishing)
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Place the unpeeled potatoes in a pot with salted water.
- 3. Cook the potatoes for about 20 minutes until tender.
- 4. Drain the water and rinse the potatoes briefly with cold water to cool them down.
- 5. Peel the potatoes and cut each one in half.
- 6. Wash the beans and remove the hard ends.
- 7. Cut the beans diagonally into pieces about 3 centimeters long.
- 8. Cook the beans in boiling salted water for about 10 minutes.
- 9. Drain the beans, rinse them with cold water, and let them drain well.
- 10. Peel the shallot.
- 11. Cut the shallot into thin rings.
- 12. Wash the apples.
- 13. Quarter the apples and remove the core.
- 14. Cut the apple flesh into thin strips.
- 15. Mix the apple strips immediately with lemon juice to prevent them from browning.
- 16. Rinse the fish fillets briefly under cold water.
- 17. Pat the fillets dry with a kitchen towel.
- 18. Cut the fish fillets into pieces about 3 centimeters long.
- 19. Whisk vinegar, vegetable broth, salt, pepper, sugar, mustard, and oil together in a small bowl.
- 20. Adjust the seasoning of the sauce with remaining spices as needed.
- 21. Put all prepared ingredients into a large bowl.
- 22. Toss the ingredients gently with the sauce.
- 23. Plate the salad.
- 24. Garnish the salad with dill tips and serve.
