  1. 1. Rinse the beans under cold water.
  2. 2. Place the beans in a pot with a small amount of lightly salted water.
  3. 3. Cover the pot and simmer the beans for 12 to 14 minutes until tender.
  4. 4. In a bowl, whisk together wasabi powder, apple juice, 2 tablespoons of hot water, salt, and pepper.
  5. 5. Stir in the oil until the sauce is smooth.
  6. 6. Wash the spring onions and slice them into thin rings.
  7. 7. Quarter the apple, remove the core, and peel it.
  8. 8. Cut the apple into small cubes.
  9. 9. Fold the apple cubes and spring onion rings into the wasabi sauce.
  10. 10. Drain the cooked beans and let them drain well.
  11. 11. Mix the drained beans into the sauce with the fruit and onions.
  12. 12. Allow the bean mixture to cool down.
  13. 13. Wash and clean the celery stalks.
  14. 14. Remove any stringy fibers from the stalk if necessary.
  15. 15. Slice the celery into thin rounds.
  16. 16. Drain the herring fillets.
  17. 17. Cut the herring fillets into thin strips.
  18. 18. Combine the herring strips and celery slices with the cooled bean mixture.
  19. 19. Let the salad marinate for about 30 minutes.
  20. 20. Cut the cress from the bed.
  21. 21. Season the salad to taste with salt and pepper.
  22. 22. Sprinkle the finished salad with the cress.
  23. 23. Serve the salad.
