🥗 Fresh Herring and Bean Salad with Wasabi Dressing

Ingredients
- 250 g green beans
- salt
- 0.5 tsp wasabi powder
- 4 tbsp apple juice
- pepper
- 1 tbsp rapeseed oil
- 1 spring onion
- 150 g tart apples (1 tart apple)
- 200 g celery (3 stalks)
- 240 g herring fillets (Bismarck herrings; 3 herring fillets)
- 1 box cress
Instructions
- 1. Rinse the beans under cold water.
- 2. Place the beans in a pot with a small amount of lightly salted water.
- 3. Cover the pot and simmer the beans for 12 to 14 minutes until tender.
- 4. In a bowl, whisk together wasabi powder, apple juice, 2 tablespoons of hot water, salt, and pepper.
- 5. Stir in the oil until the sauce is smooth.
- 6. Wash the spring onions and slice them into thin rings.
- 7. Quarter the apple, remove the core, and peel it.
- 8. Cut the apple into small cubes.
- 9. Fold the apple cubes and spring onion rings into the wasabi sauce.
- 10. Drain the cooked beans and let them drain well.
- 11. Mix the drained beans into the sauce with the fruit and onions.
- 12. Allow the bean mixture to cool down.
- 13. Wash and clean the celery stalks.
- 14. Remove any stringy fibers from the stalk if necessary.
- 15. Slice the celery into thin rounds.
- 16. Drain the herring fillets.
- 17. Cut the herring fillets into thin strips.
- 18. Combine the herring strips and celery slices with the cooled bean mixture.
- 19. Let the salad marinate for about 30 minutes.
- 20. Cut the cress from the bed.
- 21. Season the salad to taste with salt and pepper.
- 22. Sprinkle the finished salad with the cress.
- 23. Serve the salad.
