  1. 1. Rinse the herrings under running water.
  2. 2. Thoroughly dry the fish with a kitchen towel.
  3. 3. Mix the oil, mustard, salt, and pepper in a small bowl to create a marinade.
  4. 4. Generously coat the inside of the herrings with the marinade.
  5. 5. Cut the lemons into thin slices.
  6. 6. Stuff the hollowed fish with fresh thyme sprigs and the lemon slices.
  7. 7. Securely fasten the stuffed herrings in grill baskets.
  8. 8. Brush the outside of the fish with a little more of the marinade.
  9. 9. Grill the herrings for about 10 minutes.
  10. 10. Turn the fish occasionally while grilling to ensure even cooking.
  11. 11. Sprinkle the finished herrings with fresh herbs before serving.
