🍽️ Thyme-Grilled Herring

Ingredients
- 8 green herring (ready for cooking)
- 2 tbsp oil
- 2 tbsp grainy mustard
- salt
- pepper (from the mill)
- 16 thyme sprigs
- 8 thin lemon slices
- fresh herbs for sprinkling (e.g. thyme, parsley)
Instructions
- 1. Rinse the herrings under running water.
- 2. Thoroughly dry the fish with a kitchen towel.
- 3. Mix the oil, mustard, salt, and pepper in a small bowl to create a marinade.
- 4. Generously coat the inside of the herrings with the marinade.
- 5. Cut the lemons into thin slices.
- 6. Stuff the hollowed fish with fresh thyme sprigs and the lemon slices.
- 7. Securely fasten the stuffed herrings in grill baskets.
- 8. Brush the outside of the fish with a little more of the marinade.
- 9. Grill the herrings for about 10 minutes.
- 10. Turn the fish occasionally while grilling to ensure even cooking.
- 11. Sprinkle the finished herrings with fresh herbs before serving.
