  1. 1. Clean the mushrooms and slice them or tear them into small pieces.
  2. 2. Wash the spring onions, trim the ends, and slice them into rings.
  3. 3. Peel the garlic and chop it finely.
  4. 4. Heat oil in a non-stick pan.
  5. 5. Fry the mushrooms in batches over high heat.
  6. 6. Remove the mushrooms from the pan and set them aside.
  7. 7. Heat butter in the same pan.
  8. 8. Sauté the spring onions and garlic for 1 to 2 minutes.
  9. 9. Add the mushrooms back into the pan.
  10. 10. Stir the thyme into the mixture briefly.
  11. 11. Let everything simmer for 1 to 2 minutes.
  12. 12. Season with salt and pepper and serve the pan.
