  1. 1. Rinse the screw-top jars and lids in the desired size (for a total of 1150 ml content) with boiling water.
  2. 2. Let the jars drip dry upside down on a kitchen towel.
  3. 3. Rinse the organic grapefruit and organic lemon thoroughly with hot water.
  4. 4. Dry the fruits.
  5. 5. Peel the fruits very thinly using a vegetable peeler.
  6. 6. Cut the peels crosswise into very thin strips (julienne).
  7. 7. Remove the white pith from the peeled fruits.
  8. 8. Peel 3 more lemons and the remaining grapefruit so that the white skin is also removed.
  9. 9. Cut out the fruit fillets between the membranes.
  10. 10. Cut the fillets into pieces.
  11. 11. Halve the remaining 3 lemons and the orange.
  12. 12. Squeeze the citrus fruits.
  13. 13. Mix the juice with the fruit fillets and the fruit peels.
  14. 14. Weigh out a total of 750 g of the fruit mixture.
  15. 15. Stir the fruit mixture with the jam sugar in a large pot.
  16. 16. Bring the mixture to a boil over high heat.
  17. 17. Rinse the figs.
  18. 18. Halve the figs.
  19. 19. Remove the flesh with a teaspoon.
  20. 20. Cut the flesh into small pieces.
  21. 21. Weigh out 150 g of the figs.
  22. 22. Add the figs to the boiling fruit mixture.
  23. 23. Let everything boil vigorously for 3 minutes over high heat while stirring.
  24. 24. Skim the foam off the mixture with a slotted spoon.
  25. 25. Fill the mixture immediately into the prepared jars.
  26. 26. Seal the jars.
  27. 27. Turn the jars upside down.
  28. 28. Let them stand upside down for 5 minutes.
  29. 29. Turn the jars right side up again.
  30. 30. Let the jars cool down.
