🍳 Herbes Citrus Jelly

Ingredients
- 2 Grapefruits (of which 1 organic)
- 7 Lemons (of which 1 organic)
- 1 Orange
- 500 g Jam sugar (2:1)
- 200 g ripe fig (4 ripe figs)
Instructions
- 1. Rinse the screw-top jars and lids in the desired size (for a total of 1150 ml content) with boiling water.
- 2. Let the jars drip dry upside down on a kitchen towel.
- 3. Rinse the organic grapefruit and organic lemon thoroughly with hot water.
- 4. Dry the fruits.
- 5. Peel the fruits very thinly using a vegetable peeler.
- 6. Cut the peels crosswise into very thin strips (julienne).
- 7. Remove the white pith from the peeled fruits.
- 8. Peel 3 more lemons and the remaining grapefruit so that the white skin is also removed.
- 9. Cut out the fruit fillets between the membranes.
- 10. Cut the fillets into pieces.
- 11. Halve the remaining 3 lemons and the orange.
- 12. Squeeze the citrus fruits.
- 13. Mix the juice with the fruit fillets and the fruit peels.
- 14. Weigh out a total of 750 g of the fruit mixture.
- 15. Stir the fruit mixture with the jam sugar in a large pot.
- 16. Bring the mixture to a boil over high heat.
- 17. Rinse the figs.
- 18. Halve the figs.
- 19. Remove the flesh with a teaspoon.
- 20. Cut the flesh into small pieces.
- 21. Weigh out 150 g of the figs.
- 22. Add the figs to the boiling fruit mixture.
- 23. Let everything boil vigorously for 3 minutes over high heat while stirring.
- 24. Skim the foam off the mixture with a slotted spoon.
- 25. Fill the mixture immediately into the prepared jars.
- 26. Seal the jars.
- 27. Turn the jars upside down.
- 28. Let them stand upside down for 5 minutes.
- 29. Turn the jars right side up again.
- 30. Let the jars cool down.
