  1. 1. Finely chop the chestnuts and puree them in a blender together with two to three tablespoons of water and the powdered sugar until smooth. Crumble the brownie and chop the walnuts. Mix the brownie crumbs with 50 grams of the walnuts and distribute this mixture evenly among the dessert glasses.
  2. 2. Just before serving, whip 100 milliliters of cream until stiff and stir in the chestnut puree. Chop the chocolate and heat it together with the remaining cream and the espresso in a saucepan, stirring constantly, until the chocolate has completely melted.
  3. 3. Pour the hot chocolate-espresso mixture into the glasses and then top with the chestnut cream. Garnish the desserts with the remaining walnuts, the croquant (caramelized nuts), and a touch of gold leaf. Serve the chocolate immediately.
