🍽️ Baked Halibut Rolls with Creamy Pepper Sauce

Ingredients
- 8 turbot fillets, ready for the kitchen, approx. 100 g each (skinless)
- 200 g green beans
- 200 g baby carrots
- salt
- white pepper
- 40 g butter
- 1 onion
- 1 clove of garlic
- 1 red bell pepper
- 1 tbsp olive oil
- 1 tsp paprika powder (sweet)
- 200 ml fish stock
- 50 g sour cream
- 2 tbsp chive rings
Instructions
- 1. Preheat the oven to 140 degrees Celsius. Set the heating mode to top and bottom heat.
- 2. Rinse the halibut fillets briefly and pat them dry with kitchen paper. Wash the beans and carrots. Peel the carrots and trim the beans. Boil the vegetables in salted water for 3 to 4 minutes. They should still be al dente. Shock the vegetables immediately with cold water. Let them drain well.
- 3. Season the fillets on the skin side with salt and pepper. Place a few beans and carrots in the center of each fillet. Salt and pepper the vegetables. Roll the fillets tightly. Secure the rolls with wooden skewers. Season the outside of the rolls with salt and pepper as well.
- 4. Melt the butter. Brush an ovenproof dish with it. Place the rolls in the dish. Brush them with the remaining melted butter. Bake the rolls in the oven for 15 to 20 minutes.
- 5. Peel the onion and garlic. Dice both finely. Wash the bell peppers. Cut them in half. Remove the seeds and dice them finely. Heat oil in a pan. Sweat onions, garlic, and peppers for 1 to 2 minutes. They should remain colorless. Stir in the paprika powder. Deglaze everything with fish stock. Let the mixture simmer until soft for 4 to 5 minutes. Puree the sauce finely with a hand blender. Optionally pass it through a sieve. Bring the sauce back to a boil. Reduce it slightly if you want it thicker. Add more stock if you want it thinner. Remove the sauce from the heat. Stir in the sour cream. Seas
- 6. Place the halibut rolls on the plates. Spoon some sauce over them. Sprinkle with parsley. Serve the dish immediately.
