🍽️ Sicilian-style Halibut with Capers

Ingredients
- 700 g halibut fillet
- 100 ml dry white wine
- 1 sprig rosemary
- 4 tbsp olive oil
- 1 tbsp capers
- 4 anchovy fillets (in oil)
- 2 sprigs tarragon
- sea salt
- pepper (from the mill)
- 1 untreated lemon
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Rinse the halibut under cold running water.
- 3. Pat the fish dry thoroughly with a kitchen towel.
- 4. Cut the halibut into steaks or portions.
- 5. Place the fish pieces into a heatproof baking dish.
- 6. Pour the white wine over the fish in the dish.
- 7. Strip the needles from the rosemary sprigs.
- 8. Finely chop the rosemary needles.
- 9. Mix the olive oil, chopped rosemary, capers, and chopped anchovies in a small bowl.
- 10. Distribute the caper mixture evenly over the fish.
- 11. Slice the lemon into thin rounds.
- 12. Place the tarragon sprigs on top of the fish.
- 13. Season the fish with salt and black pepper.
- 14. Cover the fish with the lemon slices.
- 15. Place the dish into the preheated oven.
- 16. Bake the fish for about 20 minutes until golden brown.
- 17. Remove the dish from the oven.
- 18. Serve the dish immediately while hot.
