  1. 1. Thoroughly wash the zucchini, carrots, and spring onions.
  2. 2. Trim the hard ends and cut the vegetables into thin strips about 8 centimeters long.
  3. 3. Place the cut vegetables into a large bowl.
  4. 4. Add the juice of one lemon and two tablespoons of oil to the vegetables.
  5. 5. Season the mixture with salt and pepper to your liking.
  6. 6. Preheat the oven to 200 degrees Celsius with fan setting.
  7. 7. Take four large sheets of baking paper and lay them flat on your work surface.
  8. 8. Brush the center of each paper sheet lightly with oil.
  9. 9. Rinse the halibut briefly under running water.
  10. 10. Pat the fish completely dry with a kitchen towel.
  11. 11. Coat the fish all over with pesto.
  12. 12. Place the fish in the center of the prepared paper sheets.
  13. 13. Distribute the seasoned vegetables evenly over the fish.
  14. 14. Fold the paper halves over the fish.
  15. 15. Fold the edges of the paper multiple times firmly until the packet is tightly sealed.
  16. 16. Place the packets on a baking rack in the oven.
  17. 17. Bake the packets for 15 to 20 minutes until cooked through.
