🍽️ Halibut and Vegetable Parchment Packets

Ingredients
- 1 large zucchini
- 2 carrots
- 1 spring onion
- 0.5 lemon (juice)
- 3 tbsp olive oil
- salt
- pepper (from the mill)
- 4 halibut fillets (approx. 180 g each)
- 4 tsp green pesto
Instructions
- 1. Thoroughly wash the zucchini, carrots, and spring onions.
- 2. Trim the hard ends and cut the vegetables into thin strips about 8 centimeters long.
- 3. Place the cut vegetables into a large bowl.
- 4. Add the juice of one lemon and two tablespoons of oil to the vegetables.
- 5. Season the mixture with salt and pepper to your liking.
- 6. Preheat the oven to 200 degrees Celsius with fan setting.
- 7. Take four large sheets of baking paper and lay them flat on your work surface.
- 8. Brush the center of each paper sheet lightly with oil.
- 9. Rinse the halibut briefly under running water.
- 10. Pat the fish completely dry with a kitchen towel.
- 11. Coat the fish all over with pesto.
- 12. Place the fish in the center of the prepared paper sheets.
- 13. Distribute the seasoned vegetables evenly over the fish.
- 14. Fold the paper halves over the fish.
- 15. Fold the edges of the paper multiple times firmly until the packet is tightly sealed.
- 16. Place the packets on a baking rack in the oven.
- 17. Bake the packets for 15 to 20 minutes until cooked through.
