🍽️ Juicy Blueberry Muffins

Ingredients
- 120 g soft butter
- 120 g fruit sugar
- 1 egg
- 250 g whole wheat flour
- 2.5 tsp baking powder
- 0.5 tsp baking soda
- 1 pinch salt
- 300 g sour cream
- 200 g blueberries (fresh or frozen)
- 2 tbsp flour
- Muffin baking tray (paper liners or muffin tin)
- butter (for the molds)
Instructions
- 1. Wash the blueberries thoroughly.
- 2. Dry the berries with a kitchen towel.
- 3. Toss the blueberries in two tablespoons of flour.
- 4. Cut the butter into pieces.
- 5. Mix the butter with the fruit sugar until the mixture is creamy.
- 6. Beat the egg into the butter-sugar mixture.
- 7. Add the remaining flour, the salt, the baking powder, and the baking soda.
- 8. Stir in the sour cream.
- 9. Stir the batter only until the dry ingredients are just moist.
- 10. Gently fold in the floured blueberries.
- 11. Grease the muffin cups with some butter.
- 12. Fill the batter into the cups.
- 13. Preheat the oven to 200 degrees Celsius.
- 14. Bake the muffins for about 20 minutes in the preheated oven.
- 15. Take the muffins out of the oven.
- 16. Let the muffins cool down.
