🍰 Blueberry Quark Tart

Ingredients
- 250 g flour
- 125 g butter
- 90 g sugar
- 2 egg yolks
- 1 pinch salt
- 500 g low-fat quark
- 100 g sugar
- 1 pinch salt
- 200 g whipping cream
- 4 eggs
- 1 tsp lemon zest
- 300 g blueberries
- butter (for the pan)
- powdered sugar (for dusting)
Instructions
- 1. Pile the flour onto a clean work surface.
- 2. Mix the flour with salt and sugar.
- 3. Make a well in the center of the flour mixture.
- 4. Cut the cold butter into small cubes.
- 5. Distribute the butter cubes around the well.
- 6. Place the egg yolks in the center of the well.
- 7. Add about three tablespoons of lukewarm water.
- 8. Roughly chop all ingredients together with a knife.
- 9. Quickly knead the crumbs into a smooth dough.
- 10. Shape the dough into a ball.
- 11. Wrap the dough ball in cling film.
- 12. Chill the dough in the refrigerator for 30 minutes.
- 13. Whisk the quark cheese with sugar and a pinch of salt.
- 14. Stir the cream into the quark mixture.
- 15. Mix the eggs into the quark mixture.
- 16. Fold in the lemon zest.
- 17. Preheat the oven to 200 degrees Celsius fan-assisted.
- 18. Place two sheets of baking paper side by side.
- 19. Roll out the dough thinly between the paper layers.
- 20. Grease the tart pan with butter.
- 21. Place the dough in the pan and press it against the sides.
- 22. Shape an even edge on the dough.
- 23. Trim the excess dough at the edge neatly.
- 24. Gather the dough scraps into a new lump.
- 25. Roll out the scraps thinly again.
- 26. Cut out about twelve stars from the dough scraps.
- 27. Place the stars on a baking sheet lined with baking paper.
- 28. Bake the stars for 12 minutes at 200 degrees until golden yellow.
- 29. Pour the quark filling into the dough base.
- 30. Smooth the surface of the filling.
- 31. Bake the tart for 40 to 45 minutes in the oven.
- 32. Cover the tart with aluminum foil if necessary.
- 33. Distribute the blueberries over the hot tart.
- 34. Let the tart stand for 10 minutes in the open oven.
- 35. Remove the tart from the pan and let it cool.
- 36. Garnish the tart with the baked stars.
- 37. Dust the tart with powdered sugar before serving.
