🍰 Fluffy Blueberry Muffins

Ingredients
- 120 g soft butter
- 120 g cane sugar
- 1 egg
- 250 g flour
- 2.5 tsp baking powder
- 0.5 tsp baking soda
- 1 pinch salt
- 300 g yogurt
- 200 g blueberries (fresh or frozen)
- 2 tbsp flour
- muffin baking tray (paper liners or muffin tin)
- butter (for the molds)
Instructions
- 1. Rinse the blueberries under running water.
- 2. Gently pat the berries dry with a kitchen towel.
- 3. Toss the dry berries in two tablespoons of flour.
- 4. Beat the butter and sugar with a mixer until creamy.
- 5. Stir the egg into the butter-sugar mixture.
- 6. Add flour, a pinch of salt, baking powder, baking soda, and yogurt.
- 7. Stir the batter only briefly until the dry ingredients are just moist.
- 8. Gently fold in the flour-coated blueberries.
- 9. Grease the muffin cups with a little butter.
- 10. Fill the batter into the cups.
- 11. Bake the muffins in the preheated oven at 200 degrees Celsius for about 20 minutes.
- 12. Remove the muffins from the oven.
- 13. Let them cool on a wire rack.
