🍰 Blueberry Banana Ice Cream with Lucuma

Ingredients
- 400 g blueberries
- 2 bananas
- 30 g lucuma powder (2 tbsp)
- 4 tbsp rice syrup
- 3 tbsp lemon juice
- 250 g Greek yogurt
Instructions
- 1. Wash the blueberries thoroughly.
- 2. Let the berries drain well.
- 3. Peel the bananas.
- 4. Cut the bananas into small pieces.
- 5. Place 300 grams of the blueberries into a blender.
- 6. Add the cut bananas.
- 7. Add the lucuma powder.
- 8. Pour in the rice syrup.
- 9. Add the lemon juice.
- 10. Blend all ingredients until smooth.
- 11. Stir the yogurt into the pureed mixture.
- 12. Pour the mixture into an ice cream maker.
- 13. Let the ice cream machine run for about 40 minutes until the mixture is creamy and frozen.
- 14. Sprinkle the remaining blueberries over the semi-frozen ice cream.
- 15. Place the mixture in the freezer for 1 hour.
- 16. Alternatively: Pour the mixture into a freezer container.
- 17. Sprinkle the remaining blueberries on top here as well.
- 18. Let the mixture freeze in the freezer compartment for 3 to 4 hours.
- 19. Take an ice cream scoop for serving.
- 20. Scoop balls from the frozen mixture.
