🍽️ Fluffy Easter Hare Yeast Dough Pastries

Ingredients
- 300 g spelt flour
- 20 g fresh yeast
- 60 ml lukewarm milk
- 75 g sugar
- 250 g low-fat quark
- 1 egg (plus an additional egg yolk for brushing)
- 75 g soft butter
- 1 pinch salt
- 2 tsp grated orange peel
Instructions
- 1. Dissolve the yeast in lukewarm milk. Add one teaspoon of sugar. Stir the mixture until smooth.
- 2. Combine spelt flour, quark (fresh cheese), egg, butter, salt, and orange zest in a large mixing bowl.
- 3. Pour the yeast milk into the flour mixture.
- 4. Knead everything thoroughly with the dough hooks of an electric hand mixer until you have a smooth dough.
- 5. Cover the bowl. Let the dough rise in a warm place for about 45 minutes.
- 6. Dust your work surface with flour. Knead the dough briefly.
- 7. Roll out the dough to a thickness of about 1 centimeter.
- 8. Cut out 20 hare shapes from the dough.
- 9. Make small incisions at the ears of the hares so they can bend later.
- 10. Place the hares on a baking sheet lined with baking paper.
- 11. Brush the hares with egg yolk.
- 12. Let the hares rise again for about 15 minutes.
- 13. Preheat your oven. Set it to 200 degrees Celsius for top and bottom heat. If using fan-assisted (convection), set it to 180 degrees. For gas ovens, use setting 3.
- 14. Bake the hares for about 10 to 12 minutes until golden yellow.
- 15. Remove the Easter hares from the oven. Let them cool down.
- 16. Decorate the cooled hares with ribbons as you like.
