  1. 1. Dissolve the yeast in lukewarm milk. Add one teaspoon of sugar. Stir the mixture until smooth.
  2. 2. Combine spelt flour, quark (fresh cheese), egg, butter, salt, and orange zest in a large mixing bowl.
  3. 3. Pour the yeast milk into the flour mixture.
  4. 4. Knead everything thoroughly with the dough hooks of an electric hand mixer until you have a smooth dough.
  5. 5. Cover the bowl. Let the dough rise in a warm place for about 45 minutes.
  6. 6. Dust your work surface with flour. Knead the dough briefly.
  7. 7. Roll out the dough to a thickness of about 1 centimeter.
  8. 8. Cut out 20 hare shapes from the dough.
  9. 9. Make small incisions at the ears of the hares so they can bend later.
  10. 10. Place the hares on a baking sheet lined with baking paper.
  11. 11. Brush the hares with egg yolk.
  12. 12. Let the hares rise again for about 15 minutes.
  13. 13. Preheat your oven. Set it to 200 degrees Celsius for top and bottom heat. If using fan-assisted (convection), set it to 180 degrees. For gas ovens, use setting 3.
  14. 14. Bake the hares for about 10 to 12 minutes until golden yellow.
  15. 15. Remove the Easter hares from the oven. Let them cool down.
  16. 16. Decorate the cooled hares with ribbons as you like.
