Instructions

  1. 1. Sift the flour into a large bowl. A terracotta bowl is ideal because it retains heat well.
  2. 2. Make a well in the center of the flour.
  3. 3. Crumble the yeast into this well.
  4. 4. Sprinkle one tablespoon of sugar over the yeast.
  5. 5. Pour two to three tablespoons of water over it.
  6. 6. Stir everything with a little flour to form a thick starter dough.
  7. 7. Cover the bowl with a kitchen towel.
  8. 8. Let the dough rest in a warm place for about 15 minutes.
  9. 9. Place the bowl on the radiator or in the oven preheated to 50 degrees Celsius.
  10. 10. Meanwhile, take the butter and egg out of the refrigerator.
  11. 11. Let them reach room temperature.
  12. 12. Add the remaining sugar, butter, egg, and salt to the dough.
  13. 13. Pour in the remaining liquid gradually.
  14. 14. Knead everything well with your hands.
  15. 15. Continue kneading the dough until it is smooth and soft.
  16. 16. The dough is ready when it pulls away from the sides of the bowl.
  17. 17. This process takes up to 10 minutes.
  18. 18. Cover the dough again.
  19. 19. Let it rest for about one hour.
  20. 20. The dough should double in volume.
  21. 21. Shape the dough as needed or roll it out.
  22. 22. Bake the pastry in the oven at 180 to 220 degrees Celsius.
  23. 23. Watch the baking time, as it depends on the size of the pastry.
