🍰 Fluffy Yeast Cake with Crumbly Topping

Ingredients
- 200 g flour
- 0.5 cube fresh yeast
- 100 ml lukewarm water
- 40 g liquid butter
- 1 tbsp fruit sugar
- 1 pinch salt
- 200 g flour
- 50 g fruit sugar
- 100 g cold butter
- 2 egg yolks
- 0.5 tsp cinnamon
Instructions
- 1. Dissolve the yeast in lukewarm water.
- 2. Stir in the sugar until the yeast has completely dissolved.
- 3. Add flour, butter, and salt to a large mixing bowl.
- 4. Add the yeast-sugar mixture to the bowl.
- 5. Knead the ingredients into a smooth dough using the dough hooks of an electric hand mixer.
- 6. Cover the bowl.
- 7. Let the dough rise in a warm place for about 45 minutes.
- 8. Lightly dust a work surface with flour.
- 9. Take out the dough and knead it briefly.
- 10. Roll out the dough with a rolling pin.
- 11. Grease a baking pan.
- 12. Place the dough into the pan.
- 13. Press up the edges of the dough to form a rim.
- 14. Add flour and sugar for the crumble topping into a bowl.
- 15. Add the butter in pieces.
- 16. Add the egg yolk.
- 17. Add cinnamon and about one tablespoon of water.
- 18. Mix the ingredients on the work surface.
- 19. Chop the mixture coarsely with a large knife.
- 20. Work the mixture with your hands until small crumbs form.
- 21. Distribute the crumbs evenly over the dough.
- 22. Preheat the oven to 180 degrees Celsius.
- 23. Place the tray on the lower rack.
- 24. Bake the cake for 20 to 25 minutes.
