🍰 Yeast Rolls with Blackberry Soy Quark Filling

Ingredients
- 225 g spelt flour (Type 630 + 1 heaped Tbsp for working)
- 225 g whole wheat flour
- 7 g dried yeast
- 1 pinch salt
- 2 tsp cinnamon
- 30 ml neutral vegetable oil (e. g. rapeseed oil) + 1 tsp for greasing
- 4 Tbsp agave syrup
- 70 g dried dates (pitted)
- 45 g almond kernels (3 Tbsp)
- 70 g blackberries
- 70 g soy quark
- 1 tsp powdered sugar from raw cane sugar
Instructions
- 1. Mix both types of flour with the dry yeast, a pinch of salt, and cinnamon in a large bowl.
- 2. Stir the oil together with 200 milliliters of lukewarm water and agave syrup.
- 3. Stir the oil-water mixture into the flour mixture gradually.
- 4. Knead everything into a smooth dough that releases easily from the sides of the bowl.
- 5. Add a little more lukewarm water or flour if necessary to achieve the right consistency.
- 6. Let the dough rest covered in a warm place for 1 hour.
- 7. Chop the dates roughly in the meantime.
- 8. Pulverize the dates together with the almonds finely in a stand mixer.
- 9. Wash the blackberries and let them drain.
- 10. Add the blackberries and the soy quark alternative to the date mixture in the mixer.
- 11. Mix the filling briefly until it is homogeneous.
- 12. Work the dough through on a lightly floured work surface.
- 13. Divide the dough into two halves.
- 14. Roll each half into a rectangle of approximately 20 by 40 centimeters.
- 15. Spread each dough rectangle with half of the blackberry filling.
- 16. Leave a border of about 2 centimeters free on one long side.
- 17. Brush the free border with a little water.
- 18. Roll the dough rectangles towards the water-brushed border.
- 19. Cut the rolls crosswise into 10 to 12 pieces.
- 20. Grease an ovenproof dish of approximately 20 by 30 centimeters with the remaining oil.
- 21. Place the rolls upright close together in the dish.
- 22. Let the rolls rise covered again for 30 minutes.
- 23. Preheat the oven to 200 degrees (convection 180 degrees or gas mark 3).
- 24. Bake the rolls for 20 to 25 minutes until golden brown.
- 25. Remove the rolls from the oven and let them cool.
- 26. Lightly dust the rolls with powdered sugar before serving.
