  1. 1. Mix both types of flour with the dry yeast, a pinch of salt, and cinnamon in a large bowl.
  2. 2. Stir the oil together with 200 milliliters of lukewarm water and agave syrup.
  3. 3. Stir the oil-water mixture into the flour mixture gradually.
  4. 4. Knead everything into a smooth dough that releases easily from the sides of the bowl.
  5. 5. Add a little more lukewarm water or flour if necessary to achieve the right consistency.
  6. 6. Let the dough rest covered in a warm place for 1 hour.
  7. 7. Chop the dates roughly in the meantime.
  8. 8. Pulverize the dates together with the almonds finely in a stand mixer.
  9. 9. Wash the blackberries and let them drain.
  10. 10. Add the blackberries and the soy quark alternative to the date mixture in the mixer.
  11. 11. Mix the filling briefly until it is homogeneous.
  12. 12. Work the dough through on a lightly floured work surface.
  13. 13. Divide the dough into two halves.
  14. 14. Roll each half into a rectangle of approximately 20 by 40 centimeters.
  15. 15. Spread each dough rectangle with half of the blackberry filling.
  16. 16. Leave a border of about 2 centimeters free on one long side.
  17. 17. Brush the free border with a little water.
  18. 18. Roll the dough rectangles towards the water-brushed border.
  19. 19. Cut the rolls crosswise into 10 to 12 pieces.
  20. 20. Grease an ovenproof dish of approximately 20 by 30 centimeters with the remaining oil.
  21. 21. Place the rolls upright close together in the dish.
  22. 22. Let the rolls rise covered again for 30 minutes.
  23. 23. Preheat the oven to 200 degrees (convection 180 degrees or gas mark 3).
  24. 24. Bake the rolls for 20 to 25 minutes until golden brown.
  25. 25. Remove the rolls from the oven and let them cool.
  26. 26. Lightly dust the rolls with powdered sugar before serving.
