🍽️ Golden Yeast Wreath with Almond Glaze

Ingredients
- 150 ml lukewarm milk
- 42 g fresh yeast (1 cube)
- 80 g sugar
- 500 g wheat flour
- 100 g chopped almond kernels
- 100 g raisins
- pulp of one vanilla pod
- 80 g soft butter
- 2 eggs
- 1 tsp salt
- 100 g sliced almond kernels
- 3 tbsp (40 g) honey
- 1 tbsp whipping cream
- 50 g butter
Instructions
- 1. Dissolve the yeast in the milk and one teaspoon of sugar.
- 2. Let the yeast milk rise in a warm place for about ten minutes until it foams.
- 3. Toast the almonds in a pan without fat until they are fragrant.
- 4. Remove the pan from the heat and set the toasted almonds aside.
- 5. Sift the flour into a large mixing bowl.
- 6. Add all other ingredients and the yeast milk to the bowl.
- 7. Process the ingredients using an electric hand mixer with dough hooks.
- 8. Knead the dough first on the lowest setting.
- 9. Increase the setting to high and knead the dough for about five minutes.
- 10. The dough should now be smooth and elastic.
- 11. Cover the bowl and let the dough rise in a warm place for about 45 minutes.
- 12. Briefly knead the risen dough on a lightly floured work surface.
- 13. Divide the dough into three equal pieces.
- 14. Roll each piece into a strand about 70 centimeters long.
- 15. Braid the three strands together into a plait.
- 16. Grease a baking sheet with some fat.
- 17. Place the plait on the prepared baking sheet.
- 18. Connect the two ends of the plait to form a wreath.
- 19. Cover the wreath with a kitchen towel.
- 20. Let the wreath rise again for about 20 minutes.
- 21. Preheat the oven to 180 degrees Celsius.
- 22. Put the sliced almonds, honey, cream, and butter into a small saucepan.
- 23. Heat the mixture until it comes to a boil.
- 24. Simmer the glaze until it turns a light brown color.
- 25. Place the yeast wreath in the preheated oven.
- 26. Bake the wreath for about 30 minutes.
- 27. The wreath is done when it is baked golden brown.
- 28. Brush the wreath with the almond glaze about 10 minutes before the end of the baking time.
- 29. Let the wreath finish baking in the oven.
- 30. Remove the wreath from the oven and let it cool completely.
- 31. Decorate the cooled wreath with colorful eggs or sweets.
