🍽️ Fluffy Yeast Wheat Bread

Ingredients
- 250 g Wheat wholemeal flour
- 500 g Wheat flour Type 405
- 1 Cube Yeast (42 g)
- 1 Pinch Sugar
- 250 ml lukewarm milk
- 250 ml lukewarm water
- 3 tsp Sea salt
- 1 tsp Cornstarch
- Flour (for working)
- Butter (for the baking tray)
Instructions
- 1. Mix the two types of flour in a large bowl.
- 2. Make a well in the center of the flour mixture.
- 3. Crumble the yeast into the well.
- 4. Sprinkle the sugar over the yeast.
- 5. Pour in the milk and water.
- 6. Add the salt.
- 7. Knead the dough until it is smooth and pliable.
- 8. Lightly dust the dough with flour.
- 9. Place the bowl in the oven preheated to 50 degrees Celsius.
- 10. Cover the bowl.
- 11. Keep the oven door slightly ajar using a wooden spoon handle.
- 12. Let the dough rise for 45 minutes.
- 13. Check if the volume of the dough has doubled.
- 14. Look for cracks appearing on the surface.
- 15. Mix the cornstarch with 250 milliliters of water.
- 16. Bring the mixture to a boil once.
- 17. Let the liquid cool down until it is lukewarm.
- 18. Prepare your floured work surface.
- 19. Take out the dough.
- 20. Knead the dough vigorously.
- 21. Work in some extra flour if necessary.
- 22. Knead until the dough is smooth and elastic.
- 23. Shape a round loaf of bread.
- 24. Grease a baking sheet.
- 25. Place the loaf on the baking sheet.
- 26. Cover the loaf.
- 27. Let the loaf rise at room temperature for 30 minutes.
- 28. Preheat the oven to 250 degrees Celsius.
- 29. Place a heatproof bowl with boiling hot water in the oven.
- 30. Stir the cooled starch solution again.
- 31. Brush the loaf with the starch solution.
- 32. Score the loaf diagonally several times with a sharp knife.
- 33. Bake the bread in the oven for 10 minutes.
- 34. Reduce the oven temperature to 200 degrees Celsius.
- 35. Finish baking the bread for another 50 minutes.
- 36. Warm the remaining starch solution again.
- 37. Brush the fresh-out-of-the-oven bread with it.
- 38. Let the bread cool on a wire rack.
