🍰 Fluffy Yeast Cake with Dried Fruits

Ingredients
- 375 g wheat flour Type 1050
- 20 g fresh yeast (1/2 cube)
- 0.125 l lukewarm milk (3.5 % fat)
- 45 g raw cane sugar
- 50 g butter
- 2 eggs
- 0.5 tsp salt
- 1 tbsp water
- 50 g dried apricots
- 20 g candied fruits
- 30 g pine nuts
Instructions
- 1. Sift the flour into a large bowl.
- 2. Make a well in the center of the flour.
- 3. Crumble the yeast into the well.
- 4. Add the milk, 15 grams of raw cane sugar, and some flour from the edges.
- 5. Stir the ingredients together to form a pre-dough.
- 6. Cover the bowl and let the dough rise in a warm place for 15 minutes.
- 7. Slightly warm the butter.
- 8. Mix the warm butter with the eggs, salt, 15 grams of sugar, the pre-dough, and the remaining flour.
- 9. Knead the mixture well until a smooth dough forms.
- 10. Cover the dough and let it rise for 30 minutes.
- 11. Lightly grease a ring mold if necessary.
- 12. Fill the dough into the prepared mold.
- 13. Let the dough rest in the mold for another 10 minutes.
- 14. Preheat the oven to 200 degrees (convection 180 degrees or gas mark 3).
- 15. Bake the cake in the oven for about 30 minutes.
- 16. Turn the hot cake out onto a baking sheet.
- 17. Boil the remaining sugar with a little water.
- 18. Brush the cake with the sugar glaze.
- 19. Chop the apricots and candied fruits finely.
- 20. Decorate the cake with pine nuts.
- 21. Garnish the cake with the chopped candied fruits and apricot pieces.
- 22. Bake the decorated cake for another 10 minutes.
- 23. Let the cake cool down completely.
