🍰 Yeast Nut Cake

Ingredients
- 10 g fresh yeast
- 120 ml lukewarm milk
- 40 g sugar
- 250 g flour
- 40 g soft butter
- 1 egg

- 2 tbsp vanilla sugar
- 0.5 tsp cinnamon powder
- 20 ml rum
- 75 g ground almond kernels
- 100 g chopped almond kernels
- 1 egg yolk
- 1 tbsp whipping cream
Instructions
- 1. Mix 3 to 4 tablespoons of milk with 1 tablespoon of sugar and the yeast.
- 2. Put the flour into a bowl.
- 3. Pour the yeast-milk mixture into the center of the flour.
- 4. Mix the liquid with some flour from the edge to form a pre-dough.
- 5. Let the pre-dough rest covered in a warm place for about 30 minutes.
- 6. Wait until the pre-dough has approximately doubled in size.
- 7. Add the remaining milk, sugar, butter, and egg.
- 8. Process the ingredients with the dough hooks of the hand mixer into a smooth dough.
- 9. Ensure that the dough releases well from the edge of the bowl.
- 10. Let the dough rise covered again for about 30 minutes in a warm place.
- 11. Mix vanilla sugar, cinnamon, rum, and almonds well for the filling.
- 12. Add a little water if necessary.
- 13. Ensure that the consistency is spreadable but not too liquid.
- 14. Preheat the oven to 180°C fan-forced.
- 15. Grease the baking pan.
- 16. Dust the pan with flour.
- 17. Knead the dough vigorously again on a floured work surface.
- 18. Roll the dough out into a rectangle of approx. 25x30 cm.
- 19. Spread the filling evenly over the dough.
- 20. Roll up the dough.
- 21. Place the dough roll into the loaf pan.
- 22. Let the roll rise for another approx. 15 minutes.
- 23. Whisk the egg yolk with the cream.
- 24. Brush the dough with the egg yolk-cream mixture.
- 25. Bake the cake for about 40 minutes until golden brown.
- 26. Perform the skewer test to check the cooking time.
- 27. Let the cake cool down briefly after baking.
- 28. Remove the cake from the pan.
- 29. Let the cake cool completely on a cake rack.
