  1. 1. Mix 3 to 4 tablespoons of milk with 1 tablespoon of sugar and the yeast.
  2. 2. Put the flour into a bowl.
  3. 3. Pour the yeast-milk mixture into the center of the flour.
  4. 4. Mix the liquid with some flour from the edge to form a pre-dough.
  5. 5. Let the pre-dough rest covered in a warm place for about 30 minutes.
  6. 6. Wait until the pre-dough has approximately doubled in size.
  7. 7. Add the remaining milk, sugar, butter, and egg.
  8. 8. Process the ingredients with the dough hooks of the hand mixer into a smooth dough.
  9. 9. Ensure that the dough releases well from the edge of the bowl.
  10. 10. Let the dough rise covered again for about 30 minutes in a warm place.
  11. 11. Mix vanilla sugar, cinnamon, rum, and almonds well for the filling.
  12. 12. Add a little water if necessary.
  13. 13. Ensure that the consistency is spreadable but not too liquid.
  14. 14. Preheat the oven to 180°C fan-forced.
  15. 15. Grease the baking pan.
  16. 16. Dust the pan with flour.
  17. 17. Knead the dough vigorously again on a floured work surface.
  18. 18. Roll the dough out into a rectangle of approx. 25x30 cm.
  19. 19. Spread the filling evenly over the dough.
  20. 20. Roll up the dough.
  21. 21. Place the dough roll into the loaf pan.
  22. 22. Let the roll rise for another approx. 15 minutes.
  23. 23. Whisk the egg yolk with the cream.
  24. 24. Brush the dough with the egg yolk-cream mixture.
  25. 25. Bake the cake for about 40 minutes until golden brown.
  26. 26. Perform the skewer test to check the cooking time.
  27. 27. Let the cake cool down briefly after baking.
  28. 28. Remove the cake from the pan.
  29. 29. Let the cake cool completely on a cake rack.
