  1. 1. Dissolve the yeast and sugar in the milk until no lumps remain.
  2. 2. Add the flour, salt, rum, egg yolks, and butter cut into small pieces to a separate bowl.
  3. 3. Pour the yeast milk over the other ingredients and knead everything into a smooth dough.
  4. 4. Cover the bowl and let the dough rise in a warm place for 45 minutes.
  5. 5. Meanwhile, knead the marzipan thoroughly with the cocoa powder.
  6. 6. Form 25 small balls from the marzipan mixture for the noses.
  7. 7. Whisk one egg yolk with one tablespoon of water to create an egg wash.
  8. 8. Knead the risen dough vigorously on a lightly floured surface.
  9. 9. Roll out the dough to a thickness of 5 millimeters.
  10. 10. Cut out the bunny heads using a round cookie cutter.
  11. 11. Cut out various shapes for the ears from the remaining dough.
  12. 12. Shape the ears and press them firmly onto the bunny heads.
  13. 13. Brush the bunnies completely with the prepared egg wash.
  14. 14. Place the bunnies on a baking sheet lined with parchment paper.
  15. 15. Bake the bunnies in a preheated oven at 200 °C (convection 180 °C, gas mark 2–3) for about 10 to 15 minutes until golden brown.
  16. 16. Let the baked bunnies cool completely on a wire rack.
  17. 17. Whisk the egg whites until stiff peaks form.
  18. 18. Take one tablespoon of the stiff egg whites aside and gradually stir in powdered sugar.
  19. 19. Stir until the icing is firm enough to pipe from a bag.
  20. 20. Pipe teeth and eyes onto the bunny heads using the icing.
  21. 21. Dip a cotton swab in melted chocolate and use it to place the eyes.
  22. 22. Draw the whiskers on the faces using the chocolate-dipped swab.
  23. 23. Place a small dollop of icing in the center of the face.
  24. 24. Press one of the marzipan balls into the icing as the nose.
