🍽️ Tender Pike in Aromatic Wine Broth

Ingredients
- 450 g Pike fillet from the tail piece (4 Pike fillets)
- 400 ml Fish stock
- 3 Sun-dried tomatoes (in oil)
- 125 ml White wine
- 2 tsp Ginger (freshly grated)
- 1 tsp Coriander seeds
- 4 Fresh bay leaves
- 1 tbsp Lemon juice
- Salt
- White pepper (from the mill)
Instructions
- 1. Season the pike steaks generously with salt and pepper.
- 2. Drizzle some lemon juice over the seasoned steaks.
- 3. Cut the tomatoes into very small cubes.
- 4. Heat one tablespoon of tomato oil in a wide, shallow pot.
- 5. Add the tomato cubes to the hot oil and let them sweat for a short time.
- 6. Add half a teaspoon of ground ginger, ground coriander, and bay leaves to the pot.
- 7. Let the spices cook briefly with the tomatoes.
- 8. Deglaze the mixture with wine.
- 9. Let the liquid reduce quickly until only a small amount remains.
- 10. Pour in the fish stock.
- 11. Bring the sauce to a boil.
- 12. Reduce the heat to a low setting.
- 13. Carefully place the pike steaks into the sauce.
- 14. Let the steaks cook covered on low heat for about five minutes.
- 15. Warm the serving plates.
- 16. Remove the cooked pike steaks from the pot and place them on the warm plates.
- 17. Pour the hot sauce from the pot over the steaks.
- 18. Distribute the remaining fresh ginger, finely chopped, over the dish.
