  3. 3. Cut the tomatoes into very small cubes.
  4. 4. Heat one tablespoon of tomato oil in a wide, shallow pot.
  5. 5. Add the tomato cubes to the hot oil and let them sweat for a short time.
  6. 6. Add half a teaspoon of ground ginger, ground coriander, and bay leaves to the pot.
  7. 7. Let the spices cook briefly with the tomatoes.
  8. 8. Deglaze the mixture with wine.
  9. 9. Let the liquid reduce quickly until only a small amount remains.
  10. 10. Pour in the fish stock.
  11. 11. Bring the sauce to a boil.
  12. 12. Reduce the heat to a low setting.
  13. 13. Carefully place the pike steaks into the sauce.
  14. 14. Let the steaks cook covered on low heat for about five minutes.
