Ingredients
- 1.5 kg hare ready for cooking (1 hare ready for cooking)
- 3 garlic cloves
- 2 tbsp olive oil
- 15 tbsp dry red wine
- 2 tbsp red wine vinegar
- 2 bay leaves
- 10 each peppercorns and allspice berries
- 2 kg small onions
- 6 tbsp olive oil
- 4-5 tbsp vinegar
- salt, pepper
- 3 garlic cloves

- 1 cinnamon stick
Instructions
- 1. Divide the hare meat into portions. Do not wash the meat.
- 2. Peel the garlic.
- 3. Mix all the marinade ingredients together in a large bowl.
- 4. Place the meat pieces into the marinade.
- 5. Cover the bowl.
- 6. Let the meat marinate in a cool place for 24 to 48 hours.
- 7. Pour boiling water over the onions with their skins on.
- 8. Let the onions cool in the hot water for one hour.
- 9. Peel the cooled onions.
- 10. Place half of the peeled onions into a fireproof ceramic pot.
- 11. Pour off the marinade from the meat.
- 12. Let the meat drip dry in a sieve.
- 13. Place the meat on top of the onions in the pot.
- 14. Cover the meat with the remaining onions.
- 15. Pour oil into the pot.
- 16. Pour vinegar into the pot.
- 17. Pour a good cup of water into the pot.
- 18. Season the dish with salt to taste.
- 19. Season the dish with pepper to taste.
- 20. Peel the garlic.
- 21. Add the garlic to the meat.
- 22. Add bay leaves to the meat.
- 23. Add allspice berries to the meat.
- 24. Add a cinnamon stick to the meat.
- 25. Bring the meat to a boil briefly over high heat.
- 26. Cover the pot.
- 27. Let the meat simmer gently for 1 ½ hours.
