  1. 1. Make the pasta dough from the specified ingredients.
  2. 2. Brush the dough with a little oil.
  3. 3. Wrap the dough in cling film.
  4. 4. Let the dough rest for about 1 hour.
  5. 5. Heat oil in a pan for the filling.
  6. 6. Sauté the vegetables until translucent.
  7. 7. Add the hare meat and brown it briefly.
  8. 8. Stir the tomato paste into the mixture.
  9. 9. Season the filling to taste.
  10. 10. Pour in the stock and reduce the mixture.
  11. 11. Stir the herbs into the filling.
  12. 12. Put the filling mixture into a blender.
  13. 13. Blend the filling until smooth.
  14. 14. Let the filling cool down.
  15. 15. Stir the egg yolk into the cooled filling.
  16. 16. Roll out the pasta dough thinly.
  17. 17. Cut out hare shapes (approx. 7 cm long) from the dough.
  18. 18. Place some filling in the center of half of the hare shapes.
  19. 19. Brush the edges of the empty hare shapes with egg white.
  20. 20. Cover the filled hares with the remaining hare shapes.

  22. 22. Cook the ravioli in boiling salted water.
  23. 23. Cook the ravioli for 6 to 8 minutes.
  24. 24. Remove the ravioli and let them drain well.
  25. 25. Brown the butter slightly.
  26. 26. Add the sage leaves to the brown butter.
  27. 27. Plate the ravioli.
  28. 28. Sprinkle Parmesan over the ravioli.
  29. 29. Drizzle the ravioli with the sage butter.
