🍽️ Hare Ravioli with Sage Butter

Ingredients
- 250 g flour
- 3 eggs
- 50 g clarified butter (melted)
- 0.5 tsp salt
- 30 g tomato paste
- 50 ml cold water (more if needed)
- 20 g onions (finely chopped)
- 1 garlic clove (finely chopped)
- 20 g carrots (finely chopped)
- 20 g celery (finely chopped, as finely as possible!)
- 0.333 bell pepper (red, finely diced)
- 0.5 chili pepper (finely chopped)
- 125 g minced rabbit meat
- 2 tbsp olive oil
- 1 tsp tomato paste
- salt
- pepper
- 80 ml game stock
- 1 tbsp chopped herbs (sage, thyme, parsley)
- 1 egg yolk
- 1 egg white (for brushing)
- 80 g butter
- 16 leaves sage
- 50 g parmesan (freshly grated)
Instructions
- 1. Make the pasta dough from the specified ingredients.
- 2. Brush the dough with a little oil.
- 3. Wrap the dough in cling film.
- 4. Let the dough rest for about 1 hour.
- 5. Heat oil in a pan for the filling.
- 6. Sauté the vegetables until translucent.
- 7. Add the hare meat and brown it briefly.
- 8. Stir the tomato paste into the mixture.
- 9. Season the filling to taste.
- 10. Pour in the stock and reduce the mixture.
- 11. Stir the herbs into the filling.
- 12. Put the filling mixture into a blender.
- 13. Blend the filling until smooth.
- 14. Let the filling cool down.
- 15. Stir the egg yolk into the cooled filling.
- 16. Roll out the pasta dough thinly.
- 17. Cut out hare shapes (approx. 7 cm long) from the dough.
- 18. Place some filling in the center of half of the hare shapes.
- 19. Brush the edges of the empty hare shapes with egg white.
- 20. Cover the filled hares with the remaining hare shapes.
- 21. Press the edges of the ravioli firmly together.
- 22. Cook the ravioli in boiling salted water.
- 23. Cook the ravioli for 6 to 8 minutes.
- 24. Remove the ravioli and let them drain well.
- 25. Brown the butter slightly.
- 26. Add the sage leaves to the brown butter.
- 27. Plate the ravioli.
- 28. Sprinkle Parmesan over the ravioli.
- 29. Drizzle the ravioli with the sage butter.
