  4. 4. Let the mixture simmer for another 20 to 25 minutes.
  5. 5. Test the consistency: Drop a spoonful of the hot honey into a glass of ice-cold water.
  6. 6. If the drop hardens immediately, the brittle is ready.
  7. 7. Line a baking sheet measuring 22 x 24 cm with baking paper.
  8. 8. Pour the hot hazelnut honey mixture onto the sheet.
  9. 9. Spread the mixture evenly with a spoon or spatula.
  10. 10. Allow the brittle to cool completely.
  11. 11. Carefully peel the cooled brittle off the baking paper.
  12. 12. Cut the brittle into small cubes.
  13. 13. Fill small paper cups with the cubes.
  14. 14. Serve the brittle cubes directly from the paper cups.
