  1. 1. Line a baking tray with baking paper.
  2. 2. Lightly toast the hazelnuts in a pan without adding any fat.
  3. 3. Remove the pan from the heat and let the nuts cool down completely.
  4. 4. Put the sugar in a pot and melt it over medium heat while stirring constantly.
  5. 5. Continue to brown the caramel until it reaches an amber color.
  6. 6. Dip the cooled hazelnuts in batches into the liquid caramel.
  7. 7. Lift the caramelized nuts out one by one using a long fork or tongs.
  8. 8. Place the nuts individually onto the prepared baking paper.
  9. 9. Make sure the longer side of the nut is facing upwards.
  10. 10. Let the nuts cool down completely on the tray to harden.
  11. 11. Repeat the process until all hazelnuts are caramelized.
