🍽️ Harzer Cheese Salad – Smarter

Ingredients
- 100 ml cloudy apple juice
- 1 tbsp mustard seeds
- 1 tsp cane sugar
- 2 tbsp apple cider vinegar
- 0.5 tsp salt
- pepper
- 2 tbsp cold-pressed rapeseed oil
- 200 g radish (1 piece)
- 2 small red onions
- 300 g Harzer cheese
- 1 bunch chives
- 2 leaves head lettuce (to taste)
Instructions
- 1. Put apple juice, mustard seeds, sugar, vinegar, and salt into a pot.
- 2. Bring the mixture to a boil over high heat.
- 3. Let the liquid reduce by about half.
- 4. Season the sauce with pepper.
- 5. Whisk the oil into the sauce using a whisk.
- 6. Let the sauce cool down.
- 7. Wash the radish and peel it.
- 8. Slice the radish into very thin slices.
- 9. Peel the onions.
- 10. Slice the onions into very thin rings.
- 11. Slice the cheese into slices as well.
- 12. Place the cheese, radish, and onions into a bowl.
- 13. Fold the cooled sauce into the ingredients.
- 14. Let the salad marinate for 10 minutes.
- 15. Wash the chives.
- 16. Shake the chives dry.
- 17. Cut the chives into small rings.
- 18. Sprinkle the chives over the salad.
- 19. Garnish the salad with head lettuce if desired.
- 20. Serve the salad.
